    ISO: Chicken Burrito recipe

    Help! I have misplaced a chicken burrito recipe that I found in one of the Taste of Home magazines... could be Simple & Delicious. It was a recipe for a chicken burrito filling that consisted of making a spicy red sauce, similiar to an enchilada sauce, in a skillet and adding chicken breasts and cooking on the stovetop. After the chicken cooked, you used a fork to shred the cooked chicken. I did a search on the website but couldn't find the recipe I was looking for. Does anyone remember this? I'm pretty sure the sauce used a tomato sauce base and had spices like cumin and chili powder added to it. I made it one time and thought it would be easier to try and do it in a crockpot. But again, I've lost the recipe. Thanks!!

    hi treesyio. I don't know what the recipe is that you're looking for but thought I'd share with you how I make chicken burritos in the crockpot. They are so easy and yummy!

    4 frozen chicken breast (let slightly thaw and cut into strips)
    1 can of black beans drained
    1 can of whole kernel corn drained
    1 16oz jar of salsa (I use medium)
    shredded cheese (optional)
    sour cream (optional)
    extra salsa (optional)

    Place chicken in bottom of crockpot. Pour drained black beans evenly over chicken, then pour salsa evenly over the beans, and then pour the drained corn evenly over salsa. Cook on high for 4 hours. When done spread over tortilla shell, sprinkle with shredded cheese if desired, wrap and place in microwave to warm tortilla shell and melt cheese. Serve with sour cream and additional salsa if desired.

    You can also serve this as a soup instead of making burritos. Follow recipe exactly the same except don't drain the beans or corn. Serve in soup bowls and top with sour cream, yummm.

    Also meant to add instead of warming in the microwave you can grill the burrito in a little butter to heat.

    Thanks for the response. I just came on to post that I found the recipe... and it wasn't from Taste of Home or Simple & Delicious. It's actually one of the bazillion I've found on the internet. Here is the original recipe but when I made it, I used more tomato sauce and salsa. I'm going to make it again but make it in the crockpot instead.

    Salsa Chicken Burrito Filling

    This is a delicious and easy burrito/taco filling—it freezes well, too! I serve this with tortillas, shredded Cheddar cheese and little sour cream. You can also assemble the burritos and put them in a baking dish, cover with salsa and cheese, and bake for about 10 minutes.



    Prep Time: 5 Minutes
    Cook Time: 30 Minutes
    Ready In: 35 Minutes
    Yields: 4 servings
    INGREDIENTS
    2 skinless, boneless chicken breast halves
    1 (4 ounce) can tomato sauce
    1/4 cup salsa
    1 (1.25 ounce) package taco seasoning mix
    1 teaspoon ground cumin
    2 cloves garlic, minced
    1 teaspoon chili powder
    hot sauce to taste

    DIRECTIONS
    Place chicken breasts and tomato sauce in a medium saucepan over medium high heat. Bring to a boil, then add the salsa, seasoning, cumin, garlic and chili powder. Let simmer for 15 minutes.
    With a fork, start pulling the chicken meat apart into thin strings. Keep cooking pulled chicken meat and sauce, covered, for another 5 to 10 minutes. Add hot sauce to taste and stir together (Note: You may need to add a bit of water if the mixture is cooked too high and gets too thick.)
