CRISPY OVEN FISH
3/4 cup biscuit mix
1/3 cup yellow cornmeal
1 1/2 tsp chili powder
1 egg, beaten
1 1/2 lb orange roughy fillets
Preheat oven to 425°. Pour several tbsp oil into 9x13-inch baking pan and place in oven to heat oil. In shallow bowl combine biscuit mix, cornmeal and chili powder. Add 1 tbsp water to egg and mix well. Dip each piece of fish in egg and in biscuit-cornmeal mixture to coat well. Place in heated pan. Bake 20-25 minutes or until fish flakes easily with fork.

Prepare 1 (7 oz) box sour cream and chives mashed potatoes according to pkg directions.
SIMPLE BREAD IDEA: HUSH PUPPIES
Heat 1 (16 oz) pkg frozen hush puppies according to pkg directions.
