    Turkey and leek risotto

    Cooking Light had a great issue this month with lots of ways to use up Thanksgiving leftovers. I made this yesterday and it was great. Even my DH, who isn’t a big risotto fan and even less of a leek fan, thought it was delicious. I made stock, which this calls for, from the turkey bones, but if you don’t happen to have any on hand you could probably substitute chicken stock or broth although the flavors probably wouldn’t be as intense. Oh, I didn’t happen to have white wine handy so I used sherry instead. Also, making this again, I would add some mushrooms, maybe 1 cup or so.

     

    5 1/2 cups Turkey Stock,
    1 tablespoon butter, divided,
    2 teaspoons olive oil, divided,
    3 cups thinly sliced leek (about 3 large),
    3/4 teaspoon salt, divided,
    1/4 cup finely chopped shallots,
    1 1/2 cups uncooked Arborio rice or other short-grain rice,
    1/2 cup dry white wine,
    2 cups chopped cooked turkey (light and dark meat),
    1/3 cup grated fresh pecorino Romano cheese,
    1 1/2 tablespoons chopped fresh thyme,
    1 tablespoon chopped fresh sage,
    1/4 teaspoon freshly ground black pepper,

     

    Preparation
    Bring Turkey Stock to a simmer in a medium saucepan (do not boil). Keep warm over low heat.
    Melt 1 teaspoon butter and 1 teaspoon oil in a large saucepan over medium heat. Add leek to pan; cook 7 minutes or until tender, stirring occasionally. Stir in 1/4 teaspoon salt. Place leek mixture in a small bowl. Melt remaining 2 teaspoons butter and remaining 1 teaspoon oil in pan. Add shallots to pan; cook 2 minutes or until tender, stirring occasionally. Add rice; cook 2 minutes, stirring constantly. Stir in wine; cook 1 minute or until liquid is nearly absorbed, stirring constantly. Stir in 1/2 cup stock and 1/4 teaspoon salt; cook until liquid is nearly absorbed, stirring constantly. Add remaining stock, 1/2 cup at a time, stirring constantly until each portion of the stock is absorbed before adding the next (about 28 minutes total).

    Stir in turkey and leek mixture; cook 1 minute or until thoroughly heated. Remove from heat; stir in remaining 1/4 teaspoon salt, pecorino Romano cheese, thyme, sage, and pepper.

    Turkey-Stuffing Soup

     

          1    Roasted turkey carcass ,
               - broken into pieces ,
      2 1/2 qt Cold water ,
          3    Carrots; thickly sliced ,
          3    Celery stalks with leaves
               - sliced,
          1    Onion; chopped,
        1/2 c  Chopped parsley,
          1    Bay leaf,
          1 ts Dried thyme; crumbled,
      2 1/2 c  Leftover turkey stuffing,
          2 c  Turkey gravy,
               Salt ,

     

    Combine turkey carcass, water, carrots, celery, onion, parsley, bay leaf, thyme, stuffing, gravy and salt in soup pot. Place over medium heat and bring to boil, then reduce heat to simmer. Stir and break up all clumps of stuffing. Simmer, covered, about 1 1/2 hours.

    Remove carcass, saving any meat that can be stripped, and add up to 1 1/2 cups of water if necessary to replace evaporation. Adjust salt to taste.

    Let simmer 10 more minutes. Be sure to remove the bay leaf before serving.

    Hawaiian Turkey Salad

     

          3 c  Cooked brown rice ,
          2 c  Cooked turkey
               -- (coarsely chopped) ,
          8 oz Pineapple chunks in juice
               -- drain; reserve juice ,
          8 oz Sliced water chestnuts
               -- drained ,
          1 md Apple; unpeeled
               -- cored and chopped ,
        1/3 c  Chopped macadamia nuts ,
        1/2 ts Salt ,
        1/2 c  Plain yogurt,
               Lettuce leaves,
        1/4 c  Shredded coconut; toasted,

     

    Combine rice, turkey, pineapple, water chestnuts, apple, nuts and salt.

    Toss lightly with yogurt and 1 tablespoon of the reserved pineapple juice.

    Serve on lettuce leaves and garnish with coconut.

    Turkey, Onion, and Tomato Pita Pockets

     

          1 md Red onion, peeled & thinly sliced into rings ,
         16    Cherry tomatoes, quartered,
          1 c  Turkey, cooked, chopped,
          2 c  Iceburg lettuce thinly sliced ,
        1/3 c  Shredded fresh basil ,
          1 tb Light brown sugar ,
        1/4 c  Balsamic vinegar,
          1 tb Olive oil,
               Salt & pepper to taste ,
          4    6 in diameter pita bread rounds cut in half,

     

    In a large bowl, toss together the onion, tomatoes, turkey, lettuce, and basil.

    Sprinkle with the brown sugar and drizzle with the balsamic vinegar and olive oil. Toss well and season with salt and pepper.

    Cover and let marinate in the refrigerator for at least two hours.

    To make the sandwich, open the pita pocket and add as much mixture as you'd like.

    Turkey Chili

          3 c  Cooked, minced turkey ,
          1 md Onion chopped,
          1 c  Canned kidney beans, drained ,
          1    4 oz. can green chiles,
          2 ts Chili powder,
          1 ts Cumin powder,
          2    Ribs celery, chopped,
          3 c  Turkey or chicken broth,
          1 c  Raw rice ,
          1    6 oz. can tomato paste,
          1 ts Prepared mustard,

     

    Combine the turkey, onion, kidney beans, green chilis, chili powder, cumin powder, celery, broth, rice, tomato paste, and prepared mustard in a saucepan.

    Cover and simmer, stirring occasionally until rice is tender, about 35 minutes.

    Thanks Texas for all your work,explaining this to me. After I paste the recipe it is perfect.but after I click post,it scrambles all together.This is the crazy thing,that the Mac does not have a work pad. I will see,what Marlene finds out,since she has the same computer as I am.But I will try later again,when I have more time.====================================I have to pack,but since my DH still has the flu, I am not moderated yet.     Hi All!

     

    I am finally back from my weekend in Lansing.  I arrived Saturday am and by noon the snow had started.  My GF and I spent the rest of the day and all day Sunday baking cookies.  We got about 8 inches total.  The worst of the snow went a little south of us, down around the Ohio border they got about 14 inches.

     

    We made 6 batches of Pecan Tassies - my GF's grandmother was a pastry chef and she makes the absolute best Pecan Tassies.  My GF is training me.  We also made 3 batches of Cherry Crowns, 2 batches of Russian Tea Cakes, 2 batches of 7 Layer Cookies, and because my GF supports a lot of fund raisers, we also made pre-mixed M&M cookies, pre-mixed White Chocolate Macadamia Nut Cookies, and pre-shaped sugar cookies, which we decorated.

     

    Renate - I don't remember exactly what I wrote but apparently I was not clear - in order to space between paragraphs - at the end of your paragraph double space instead of single space.  Hope this helps you!! Big Smile

    Picasso - Renate and I both have mac computers. She wondered if I could help. I tried your suggestion of double spacing and it doesn't work. It may with another computer but not our macs. My son is an IT person and arrives home for the holiday late on Thursday. So maybe Friday I will have a solution for Renate and I. Marlene

    Oh I hope he can help you!  I have used a Mac in the past, but not very much.  I feel for the frustration caused when you can't get something to work.

    Today dh and i went and ate Mexican for lunch....it was so good! Its one of my favorite rest. in town....

    I'm at work right now, so I don't have any recipes with me......maybe I can post some later..

    Renate,

     

    Do you have any kind of word processing on your computer? I also have Microsoft works so my special recipes can be copied there too. They also have "special format' under edit and "unformatted text" where you can copy those recipes that have boxes around them.

     

    Also, you can post your message there and put paragraphs in. Just copy and paste from there and it should work on the new BB. Maybe your son can find a resolution for you if these options don't work. I hope you find an answer soon.

    Texas,thanks for trying to help me. I am furious ! I had lots and lots of recipes and German Corners in my bookmarks and they are all gone.All of Twinkles threads and recipes from Ericka. I looked two days ago and I still found them there. I thought they were save there,thats how much I know about computers. They whole thing is just crazy. I think I just had enough. Renate

    I have had this recipe for a long time.  The original recipe is very good, and the tweaked version is also very good and even healthier.  Both versions are filling and satisfying.   My changes are in ().   

    TURKEY GOULASH

    1 lb ground turkey

    salt to taste

    pepper to taste

    onion powder to taste

    garlic powder to taste

    1 16 oz can whole tomatoes, chopped

    2 cans V-8 juice (4 cans V-8 juice)

    1 green pepper (2 green peppers)

    1 Tbsp minced onion

    2 oz elbow macaroni (4 oz elbow macaroni)

    (2 medium zucchini)

     

    Brown turkey well with seasonings.  Add tomatoes, juice, green pepper, and onion.  Bring to a boil.  Add macaroni and continue to boil, uncovered, until macaroni absorbs all of the juice and is tender.  About 20 minutes.  Add zucchini near end. 

     

    Original version is 4 servings, altered recipe serves 8.

     

    Original recipe is WW 7 points, altered recipe = 4 points

    Texas,how can you bump up an old post ??? I can look at all the recipe,which are posted,but there is not a place,where you can put your name in or the name of the recipe you are loking for and bump it up,as I used to do. The only place is on top and it only brings up TOH recipes,not our own.

     

    Answer No. I - How to find recipes by recipe name:

     

    For recipes go to the Recipes forum. Put in the name of the recipe in the search box. Click on Community and then scroll down to the very last recipe and beneath that post it says, "More options". Click on that. Then to to "Date filter" and click on it. Choose the length of time going back from all to one year or to various weeks and days time period. Click on your choice of time periods. Go back to the name of the recipe on the top and hit search. To bump, click on reply and this should bump up the post.

     

    Answer No. 2 - How to find recipes by nicknames:

     

    Go to "Forums Message Board" on right below red bar. Then go to "short cuts". Click on "Find a User". Put in the name in "Listing of Members of the Community." Click on "Search.

     

    Scroll down to beneath the tan/gold colored bar and click on "user name" and got to our "My page". Click on bottom left corner "Search for posts by _________ (put in the nickname of person you are searching for) and post by that particular nickname/person will come up.

     

    Gee I know this is complicated but I have tried it and if I didn't forget anything it should work for you.
