    SUGARLESS HOLIDAY DATE NUT SQUARES

    SUGARLESS HOLIDAY DATE NUT SQUARES

     

     
    1/2 c. chopped dates
    1/2 c. raisins
    1/2 c. chopped prunes
    1 c. water
    1/4 c. butter
    1 tsp. soda
    1 c. flour
    1/4 tsp. salt
    1/2 tsp. cinnamon
    1/4 tsp. nutmeg
    2 eggs
    3 tbsp. frozen unsweetened apple juice
    1 tsp. vanilla
    1/2 c. pecans
     
    Simmer fruits in water for 5 minutes. Stir in butter; cool mixture. Mix remaining ingredients together. Stir in cooled fruit mixture. Press into greased 9 x 13-inch pan. Bake 15-20 minutes at 350 degrees. Cool. Cut into 2 inch squares

    These sound so good!

    Do you know if this is something a diabetic can eat?  Two people I know have recently been diagnosed, but I don't know very much about it.  I would like to make something nice for them for the holiday, but don't want to mess with their diet.

    hi - i don't know if they are good for a diabetic - i think so but i wouldn't like to say something wrong - i hope someone who knows will help you... twinkle
