I've been looking for a good Mexican lasagne that my family would eat, but there was always something someone would object to, so I decided to try my own. Not only did the pickiest eater in the family declare it good, but I took it to a pot luck yesterday and several people requested the recipe, so I thought I'd share it here too.
Momma’s Mexican Lasaña 1 lb. ground beef 1 lb. ground beef 1 env. burrito seasoning mix 1 env. taco seasoning mix15 oz. refried beans w/ jalapeños ¼ c. frozen corn kernels1 lb. jalapeño jack cheese 8 oz. cheddar cheese16 oz. sour cream 9 – 12 lasagne noodles Prepare noodles as package directs. Line the bottom of your baking dish with one layer of noodles. Brown one pound of ground beef; drain. Add burrito seasoning mix, one envelope of water, and beans; mix well. Simmer for 5 minutes. Spoon mixture evenly over noodles in baking dish. Top with half the jalapeño jack, then smooth half the sour cream over it and top with another layer of noodles. Brown the other pound of ground beef; drain. Stir in taco seasoning and one envelope of water; simmer for 5 minutes. Stir in corn (and some black beans too, if you like). Spoon mixture evenly over noodles. Top with cheddar and smooth the remaining sour cream over it. Add the final layer of noodles and a final layer of jalapeño jack. Bake at 350˚ for 45 – 60 minutes.
I also discovered at this pot luck that my DD is one of THOSE people - she doesn't like to share her recipes for the things she is best known for. How could I have raised someone like that?!!
