    Surprise [:O] HELP!! Christmas dinner @ my house!

    Gaahhh, i'm so excited, yet so nervous all at once. Usually we have Christmas dinner at mom's. This year they all want to come to my houseSurprise !! I threw a Halloween party this year and used recipies out of my Halloween special magaizine I purchased a while ago from Taste of Home. I guess that did the trick because we've NEVER had Christmas dinner at my house. Anybody have some tastey recipies to share with me? We're not big turkey fans, I don't think i've made a turkey in about 2 yearsHuh?. I'm lookin for appitizers, the main course, some sides, and some desserts. Hope you all have a wonderful day

    For Christmas Eve, I am having Broccoli soup, sandwiches and relish tray.  If you want formal, you can have pork tenderloin, beef roast, steak, stuffed chicken breast or for something like lasagna. Pick your main course and everything else falls into place.

    Hi Gem,

    This is what we are having ham, mashed potatoes, gravy, fruit salad, veggies w/ dip, baked beans, homemade white, pumpkin & banana breads, cherry cheescake for dessert & finger jello suckers for the kids for Christmas Eve.

    On Christmas Day we are having prime rib, cheesy potatoes, corn casserole, fruit salad, veggies w/ dip, applesauce, all the homemade breads, finger jello suckers, & pumpkin cake w/ cream cheese frosting.

    I think by the time Thanksgiving is over, we are all about "turkeyed-out".  We'll be having a Christmas Eve gathering at my house with pulled pork barbeque sandwiches, deli ham and turkey for sandwiches, cheeses, barbequed wings, chips, dips, potato salad,  baked beans, a relish plate, cookies, candies, several pies, Tuxedo Brownie cups and fruitcake. 

     

    One of the appetizers I'm serving is Rachel Ray's Olive Spread.

     

    1 clove garlic, peeled and grated

    1 cup pimiento stuffed olives

    1 cup Ricotta cheese

    1 cup (8 oz. bar) cream cheese, softened

    Put everything in food processor. Pulse to combine ingredients. Blend until smooth.

    May top with toasted chopped nuts if desired.

    Good served with sliced toasted baguettes or parmesan pita chips, celery sticks, etc.

     

    On Christmas Day, we are eating at my daughter's home. No matter what, we must have Southern Cornbread Dressing, so she is making that and the gravy.  I'm baking a ham with a Dijon mustard/orange marmalade glaze and Holiday Dinner Rolls.  Another daughter is bringing the cranberry sauce and green bean casserole.  I'm sure there will be plenty of desserts left over from Christmas Eve.

    Here are a couple recipes that are really good.

    Dip

    2 C. shredded cheddar cheese

    6 oz. cream cheese

    1 1/2 C. sour cream

    1 C. diced cooked ham

    1 can (4 oz) green chilies, drained

    Mix this all together, chill and serve with veggies and crackers.

    Here's a couple more,  very easy recipes but just wouldn't be christmas at our house without them

    Paula Deans Mystery Pecan Pie

    1 pie shell

    Mix together -

    1 pkg cream cheese

    1/3 C. sugar

    1 tsp. vanilla

    1 egg

    Spread this over the crust

    Top with - 1 1/4 C. lightly chopped pecans

    Top with -

    3 eggs

    1/4 c. sugar

    1 C. corn syrup

    1 tsp. vanilla

    Mix this together, pour gently over the pecans.

    Bake 45 minutes at 350.  Cool.

     

    Strawberry Rhubarb Salad

    4 C. diced rhubarb

    1/3 C. water

    1/2 C. sugar

    2 small packages strawberry jello

    3/4 C. orange juice

    2 C. sliced strawberries (i usually use frozen ones)

    Combine rhubarb, water and sugar,  cook till tender

    Mix the jello into the hot rhubarb, stir till completely dissolved.

    Add orange juice,  Chill till syrupy, fold in strawberries.  Pour into a pretty bowl and chill.

     

    Frozen Cherry Salad

    1 can cherry pie filling

    1 can eagle brand milk

    2 TBS lemon juice

    1 large can crushed pineapple, drained

    1 small tub cool whip

    Mix the eagle brand and the lemon juice,  add the pie filling and pineapple,  Fold in cool whip.  Freeze,  Take out of freezer about 20 minutes before serving.

    I was thinking of making a prime rib...or is it standing (crown) rib roast?, just depends on how costly the cut of meat will cost me. We had ham last year. However, I've never made it myself, just dont want everyone to come over for a dry slab of meat for dinnerTongue Tied

    I'm pretty good with ham, but that's just super easy, its like microwaving a big piece of meat and brushing a sugar coating on it, lol.

     

    Anyone out there with a recipe for Yorkshire pudding? I'll try out the *** dean pecan pie recipe, my DH loves pecan pie and I <3 Paula Dean. I guess i'm stuck on appetizers ( i only have one in mind that will be gone within the first 5 mins they're here-they love my sausage cheese balls), sides to go with the roast ( only have mashed potatoes, gravy, and collard greens so far), and a dessert other than the pie.

     We having:

    Rib roast
    Roasted potatoes
    Yorkshire Pudding
    Green beans with caramelized shallots
    Rolls

    Desserts--Not sure yet

     

    Yorkshire Pudding

    Ingredients:

    • 1 cup plain flour
    • 1 cup eggs
    • 1 cup milk
    • salt

    Directions:

    # Preheat the oven to hot (425F/220C/Gas 7)
       # Put a teaspoonful of oil or dripping in each of several muffin tins or, to be truly Yorkshire, a couple of tablespoonsful in a larger roasting tin and place in the oven until the fat is really hot and beginning to smoke. Meanwhile combine the rest of the ingredients and beat to form a batter of the consistency of double cream.
       # If you wish you can add mixed dried herbs to add a savoury flavour.
       # When the fat is smoking take the tin out of the oven and place it over a low light so that it doesn't cool as you add the batter.
       # Pour in the batter If you're using muffin tins don't over fill.
       # Remember that the puddings will rise and puff up.
       # Put the tin back into the top of the oven as soon as possible and leave for about 20-25 minutes by which time they will be puffed up and crisp.

    May I make a suggestion - don't make this harder than you have to.   I make homemade raviolis every year for Christmas dinner and it is a family tradition.  You could do lasagna, ham, something staple.  Don't make it more difficult than it need to be.  I found that the people enjoy the holiday because of my being relaxed and hospitable, so that means you need to make your menu something you can make ahead and just heat while you are enjoying your guests.  The seven layer salad is always a great addition to a holiday dinner.  Crescent rolls (yes I use Pillsbury) and a great tray of cookies is always appreciated.  Relax and make what you are comfortable with, and your guests will be comfortable too.

    How about cranberry ambrossia. It is so simple and easy and you can make it ahead as it stays in freezer until serving time.

    How about a beef roast with potatoes, carrots and gravy.  I usually make a side salad and jello salad for desert.  Another option is stew and you can prep all the veggies the night before.  There are some great slow cooker recipes on here for roast.  A simple fruit salad: chop up apples, bananas, and grapes into a bowl, add small marshmellows and whiped cream.  You can make fresh whip cream or use something like cool whip.  Smile
