Here's one I've made for our Christmas Eve buffet. Saw it on Rachel Ray's show.
Olive Spread
1 cup pimiento stuffed olives
1 cup Ricotta cheese
1 (8 oz.) pkg. cream cheese, softened
1 clove garlic, grated (I used 1 tsp. garlic powder)
Put all ingredients into food processor. Pulse until well mixed then blend until smooth.
She served with celery sticks, toasted sliced baguettes and parmesan pita chips.
I'll have the celery sticks and whatever kind of chips the daughters bring.
