I purchased a large quantity of pears from a fundraiser and needed a few recipes to use them up. This combination looked interesting and conveniently I had all of the ingredients on hand, even the ice cream for on top
. We love "crisps" so this recipe was the first on my list to try. I made a few changes and will list them as well. We really liked it, so I thought I'd share. The recipe was found here on the search and is from Country Woman Christmas.
Based on the amounts of fruit used, I guess it should actuallly be called...
Pear Apple Cranberry Crisp

8 medium pears, peeled and sliced

4 medium tart apples, peeled and sliced * used McIntosh
|
|
2 cups fresh or frozen cranberries, thawed * used 1 cup fresh (they were actually the left over sugared cranberries I made for a holiday get-together.)

1 cup sugar * used 3/4 cup brown sugar
|
|
3/4 cup all-purpose flour
* I added 1/2 t pumpkin pie spice

| TOPPING: |

1 cup packed brown sugar
|
|
3/4 cup all-purpose flour
|
|
3/4 cup quick-cooking oats * used 3/4 cup quick oats
& 3/4 cup rolled oats
|
|
1/4 teaspoon ground cinnamon * used 1/2 t cinnamon
& 1/4 t ginger
|
|
1/2 cup butter * used margarine
|
| Directions: |
| In a large bowl, toss the fruit, sugar and flour. Pour into a greased 13-in. x 9-in. x 2-in. baking dish. For topping, in a bowl, combine the brown sugar, flour, oats and cinnamon. Cut in butter until mixture resembles coarse crumbs. Sprinkle over fruit mixture. |
| Bake at 350° for 60-65 minutes or until fruit is tender and topping in golden brown. Yield: 12-14 servings. |
