    Panini Recipes/ any good ones out there???

    I just received a panini pan and grill press...(not the machine)

    Worked great and cleaned up in a snap...  Not bulky to store either.

    Anyone have some favorite recipes?

    Boy are they good...

    I just had some sliced Italian Bread

    Mixed mayo and yellow mustard together ( equal amounts) to make a spread

    I used an Italian bread dipping oil with seasonings on the outside of the bread slice.(both slices)

    On the inside, I spread the mustard and mayo combination.

    I sliced thinly....ham, tomatoes, onions and a bit of parsley

    Put one thin slice of provolone cheese ontop of all.

    Put the other slice of bread ontop .

    Grilled one side with the press ontop. Flipped over and grilled the other side.

    Wonderful!!!

    (I have the grill pan that has the ridges so it gives the grill marks....)

    We are hooked....

    Carrabba's Bread Dipping Oil

    1 tablespoon fresh minced basil
    1 tablespoon fresh minced parsley (Italian best)
    1 tablespoon fresh minced garlic
    1 teaspoon thyme
    1 teaspoon oregano
    1 teaspoon black pepper
    1/2 teaspoon minced fresh rosemary
    1/2 teaspoon kosher salt
    1/4 teaspoon crushed red pepper flakes
    1/2 cup olive oil
    1/8 teaspoon fresh lemon juice


    Directions:

    Combine all except oil and lemon juice in a small food processor or coffee bean grinder. Chop briefly until all about the same size. Stir in olive oil and lemon juice.

    To serve, combine about 1 1/2 tsp. herb mixture to 3-4 Tbsp. olive oil mixture on a small dish.

    Dip sliced bread in mixture.

    Serves / makes .3/4 cup

    RE: Dipping Oil for bread

     
    Buy the finest olive oil you can. (a small bottle would be good to practice). Dipping oil is an infusion, where fresh herbs are added to the oil. We use fresh sage, basil, rosemary, whole leaf. Store in your pantry for afew days, then transfer to a pouring bottle. Doesn't need to be refrigerated.

    Another infusion, red hot chile pepper, garlic clove, whole black peppercorns. Lol, this one will tickle your tastebuds.

    About an 8 oz. bottle of olive oil; then, give it a shake now and then, and you have dipping oil.

    Tip: to get the plastic pouring spout off the olive oil, pop it off using a fork prong in the center, then you can stick your herbs in; then replace plastic spout.
