    Barley recipes

    Nutty Barley Bake.

     

    Ingredients:

    • 1 medium onion, chopped
    • 1 cup medium pearl barley
    • 1/2 cup slivered almonds or pine nuts
    • 1/4 cup butter
    • 1/2 cup minced fresh parsley
    • 1/4 cup thinly sliced green onions
    • 1/4 teaspoon salt
    • 1/8 teaspoon pepper
    • 2 cans (14-1/2 ounces each) beef broth
    • Additional parsley, optional

    Directions:

    In a large skillet, saute the onion, barley and nuts in butter until barley is lightly browned. Stir in the parsley, green onions, salt and pepper.
        Transfer to a greased 2-qt. baking dish. Stir in broth. Bake, uncovered, at 350° for 1-1/4 hours or until the barley is tender and the liquid is absorbed. Sprinkle with parsley if desired. Yield: 6 servings.

    Crockpot Beef Barley Soup

    1 pound lean stew beef, cut in 1/2-inch cubes
    1/2 cup chopped onion
    2 ribs celery, chopped
    2 medium carrots, diced
    3/4 cup barley
    1 bay leaf
    6 cups beef broth
    1 teaspoon salt, or to taste
    pepper, to taste

    In crockpot, combine stew beef with onion, celery, carrots, barley, bay leaf, and beef broth. Cook beef and barley soup on LOW in crockpot for 6 to 8 hours. Taste and add salt and pepper, to taste.

    John you beat me to it, I was going to post our Household favorite...your Crockpot Beef Barley...So delicious...it's a keeper

    I found this one using barley and it sounds real good to me

    White Chili 

    Ingredients:

    • 1/4 cup vegetable oil
    • 1 large onion, diced
    • 1 tablespoon minced garlic
    • 1.5 lbs. ground turkey
    • 1 lb. ground turkey breast meat, cubed
    • 1 teaspoon cumin
    • 1 teaspoon majoram
    • 1 bay leaf
    • 4 cups chicken stock
    • 1/2 teaspoon kosher salt
    • 1 cup pearl barley
    • 15.5 oz can garbanzo beans, rinsed
    • 1 minced jalapeno chili pepper, or to taste
    • salt to taste
    • 1 cup grated cheddar cheese
    • 1/2 cup chopped scallions

     



     

    Directions:

    1. Heat oil in a saucepan and saute onion & garlic over medium heat for 5 minutes. Add ground turkey and breast meat, saute until browned.

    2. Add cumin, majoram and bay leaf. Cook for 2 minutes. Add chicken stock and kosher salt, bring to a boil. Add barley, garbanzo beans and jalapeno. Bring to a boil.

    3. Simmer for 45 minutes.

    4. Remove bay leaf. Taste, and add salt as needed. Serve garnished with cheese and scallions.

    This is from the local Junior  League and a great recipe the book is called Applehood and Motherpie.   I love it!

    Barley Pilaf

    1 1/2 lbs fresh sliced mushrooms

    2 medium chopped onions

    8 Tbs butter

    1 3/4 c medium pearl barley-uncooked

    4 c chicken broth

    Saute' mushrooms, onions in 4 T of butter-place in a 2 qt casserole.

    In the same pan, saute' barley in the remaining butter over low heat until almond colored this will take about 10-15 minutes. Pour over the mushrooms.

    Pour broth over all, salt and pepper to taste, bake covering only during the first half of the cooking time til the barley is dry, abut 1-1 1/2 hours at 350 degrees.

    Hearty and Hot Fiber Filled Cereal

    6 cups water
    1 cup apple juice
    1/2 cup pearl barley
    1/2 cup brown rice
    1/2 cup steel-cut Irish oats or old-fashioned oats
    1/2 cup raisins or dried cranberries
    1/2 cup chopped dates
    1/4 cup packed brown sugar
    1/2 teaspoon salt
    3/4 teaspoon cinnamon
    1/8 teaspoon nutmeg
    2 Tablespoons chopped walnuts, toasted


    1. In a large saucepan or Dutch oven, combine the water, apple juice, barley, rice, oats, raisins or cranberries, dates, brown sugar, salt, cinnamon, and nutmeg. Bring to a boil over high heat. Reduce heat to medium-low, cover and simmer, stirring occasionally, for 45 minutes. Uncover, and simmer, stirring occasionally for another 10 minutes or until all the liquid is absorbed and cereal is creamy.


    2. Spoon into serving bowls and sprinkle some of the chopped walnuts over each. Makes 6 servings. You can serve the cereal drizzled with a little maple syrup, if desired.
