Jet,we did not get any snow so far. It only rained a little bit. One of my  DD's DH  friends was found on a hskiing trail dead. He had a heart disease and did not know it.He was 38. His family is trying to let people know,to have heart check ups, even when they are young. That must have been a terrible chock to you and your family. I can not even imagine this.

I am the other person, who should loose weight. Most of my life I was under weight and I did not watch it,since I was so happy, when I gained weight.Than ,after myDD was born,it went into the wrong direction.

I never had any date bread. I have to bake some.

Lydia, I think I will use Erna's recipe for the Salmon, but I will not put it under the broiler. It is to risky, that the fish will dry out. When I still was single and lived in an apartment house, there was a family from S.America. They broiled nearly everything. I wanted her to show me,what she did,but they suddenly moved away.

Renate,  Erna's recipe is a thumbs up; I love salmon.  Know what you mean by being a skinny-bones, now my hubby teases me about my little pot belly.  Hummph, I told him at least I can't use my belt for a jump rope (he gains all around the waist, Santa-style).

Jet, TY for the thumbs-up on watching our tickers.  29; such a young man.  Good for you in losing some pounds  Hope you are taking a multi-vitamin.

Snow coming in pretty good; Renate, from your area, blowing SE winds.  lydia

Bourbon Brown Sugar Salmon with Onion Sauce Recipe
    Source: © Cooking Light Magazine

Cereal nuggets create a crunchy topping for meaty salmon. Serve with roasted potatoes and asparagus.

    RECIPE INGREDIENTS

    1 (2 1/4-pound) salmon fillet
    3 cups onion, thinly sliced
    1/2 cup packed brown sugar
    1/2 cup water
    1/2 cup bourbon
    1 tablespoon low-sodium soy sauce
1 teaspoon freshly ground black pepper
    3/4 teaspoon salt
    6 tarragon sprigs
    4 thyme sprigs
1/3 cup nut-like cereal nuggets (such as Grape-Nuts)
    1/4 cup pecans, chopped
    Cooking spray
    3/4 teaspoon salt
    2 tablespoons packed brown sugar
    2 tablespoons honey
    1 1/2 teaspoons water

    RECIPE METHOD

Place salmon in a 13 x 9-inch baking dish. Combine onion and the next 8 ingredients (onion through thyme); pour over salmon. Cover and marinate in refrigerator 2 hours, turning occasionally.

Preheat oven to 350 degrees F.

Place cereal and pecans in a baking pan. Bake at 350 degrees F for 7 minutes or until toasted. Place mixture in a food processor; pulse 4 times or until finely chopped.

Remove salmon from marinade; reserve marinade. Arrange the salmon diagonally on a broiler pan coated with cooking spray. Sprinkle with 3/4 teaspoon salt. Combine 2 tablespoons of sugar, honey, and 1 1/2 teaspoons water, stirring with a whisk. Spread honey mixture over salmon; sprinkle with cereal mixture, gently pressing into salmon. Bake at 350 degrees F for 20 minutes or until fish flakes easily when tested with a fork.

While salmon bakes, place reserved marinade in a small saucepan. Discard tarragon and thyme. Bring marinade to a boil over medium-high heat; cook until reduced to 3/4 cup (about 10 minutes). Serve sauce with salmon.

Chicken Stew with Cider and Parsnips Recipe
Source: Quick from Scratch - Chicken, Turkey, and Cornish Hen
    Serves 4

Carrots, parsnips, and chicken simmer in a sauce of apple cider and chicken broth, making a delicious and homey stew-perfect for a chilly fall evening.

    WINE RECOMMENDATION:
A "comfort" wine will make this dish even more satisfying. A rustic red from the south of France, such as a Cahors or Minervois, is a good possibility.

    RECIPE INGREDIENTS

    2 tablespoons cooking oil
    4 chicken thighs
    4 chicken drumsticks
    3/4 teaspoon salt
    1/4 teaspoon fresh-ground black pepper
    1 tablespoon flour
    1 cup apple cider
1 1/2 cups canned low-sodium chicken broth or homemade stock
1 onion, cut into thin slices
1 pound parsnips, cut into 1-inch pieces
2 carrots, cut into 1-inch pieces
    1/2 teaspoon dried thyme

    RECIPE METHOD

Heat the oven to 400 degrees F. In a large pot or Dutch oven, heat the oil over moderately high heat. Season the chicken thighs and drumsticks with 1/4 teaspoon of the salt and the pepper. Cook the chicken until browned, turning, about 8 minutes in all. Remove. Pour off all but 1 tablespoon of the fat from the pot.

Reduce the heat to moderate and stir in the flour. Whisk in the cider and the broth and bring to a simmer, scraping the bottom of the pot to dislodge any brown bits. Add the onion, parsnips, carrots, thyme, and the remaining 1/2 teaspoon of salt. Simmer, partially covered, for 10 minutes.

Return the chicken to the pot. Bring the stew back to a simmer, cover, and put in the preheated oven until the chicken is done and the vegetables are tender, about 15 minutes.

    MENU SUGGESTIONS

Simple boiled potatoes, egg noodles, or rice would be perfect for catching the stew's extra sauce.

    Easy Savory Gravy Recipe
    Source: © Cooking Light Magazine
12 servings (serving size: about 1/4 cup)

This gravy is thickened with a lightly browned roux, which adds richness. Soy sauce gives it a hearty flavor.

    RECIPE INGREDIENTS

    2 tablespoons olive oil
    6 tablespoons all-purpose flour
Two (14 1/2-ounce) cans vegetable broth
    1/4 cup low-sodium soy sauce
    1/2 teaspoon black pepper

    RECIPE METHOD

Heat oil in a saucepan over medium heat. Add flour; cook 5 minutes or until lightly browned and fragrant, stirring constantly with a whisk. (If flour browns too quickly, remove pan from heat; stir constantly until it cools.)

Gradually add broth to pan, stirring constantly with a whisk. Stir in soy sauce and pepper; cook until thick (about 15 minutes), stirring frequently.

Lydia,I just found this recipe for Salmon.which is baked in the oven. I fix fish often, but I usually make a light coating and this is the only dish I fry in the frying pan with butterStick out tongue

No snow so far, but cold north wind. There were a few flurries ,when all of us were still sleeping .Snow showers on Monday and Tuesday, we will see. I am missing sitting in the Colorado sun and getting more Vitamin D. Since the skin cancer scare, many of us have a deficiet of vitamin D.

Well this acupuncture treatment as a lot more ouchy than the first one!  It will still be worth it if it helps.

I have been trying to lose some weight since Christmas too.  I am down about 5 lbs and I have about 25 to go maybe 35.  I was 10 lbs heavier than last year at this time so I decided that is enough of that!

Renate, the salmon recipe sounds so good; I had a plank charcoal grilled maple salmon in Ft. Lauderdale, yumm, I can still taste it.  DH makes the best fish - it never tastes "fishy."  OMG, when expecting DS#1 my FIL & MIL invited me over for dinner often when DH was traveling (we lived two doors down).  When he made fish, it'd stink up the block - it was all I could do from barfing at their table; think he used to soak it in milk.  Took me a few years to eat fish after DS was born; lol, even my MIL didn't like it.  Looking back, it was pretty funny.

Vitamin D - I wear SPF 25 up here in Wisc., SPF 50 in Florida - I still get tan.  Especially in Florida you see lots of "crispy tourists" and leathery-skinned residents.  So I get my Vit. D from my vitamin.  But I know how nice it is to feel the sun after alot of dark days.

Erna, that's so nice that you take such good care of Auntie.  DH's family finally had to put Carm and Mia in an Italian nursing home.  They're in their 90's and couldn't continue to live in their 3rd floor apartment.  My sons visited and said if you wanted to be crazy visit a bunch of little old Italian ladies in a nursing home - sons got pinched, hugged, kissed.

Berny, ouch, hope the acupuncture is going well.  Have always heard it's a fine form of alternative medicine, but you have to have a good practicioner.  Is your elbow like a pinched nerve pain, or like arthritis; it sounds wretched.  My right hip is creaky, but the treadmill seems to be helping.  DH did not earn brownie points when he said I was getting to be an old broad, lol, no cookies for him.

Temp. has dropped 20 deg. since this morning, now 5 deg.  Snow on and off.  When my sons crab about shoveling, I remind them about people that work outside all the time (my brother does).  Then when they say why I don't shovel snow, I said I'm practicing being a Domestic Goddess.  lydia

Renate thanks for the recipes they sound good! I never have tried fixing salmon yet......I have some in the freezer so I might give it a try soon..

Waving to everyone! I'm at work, so can't be on here very long.....

Melanie, I think quilting is such a great pasttime with lots of rewards. This is the only craft I will not attempt to do. Few years ago we visit the state of Vermont and I forgot the name of the town were they have the most beautiful quilt museum. I never seen anything more beautiful in my life.

You snow ladies I don't envy you right now, lately we have the best winter weather. Lots of sunshine and nice crisp air.

Berny, you giving DS great answers for not shoveling snow. Tell him he has to build up muscles.

I am off to a fun day playing cards and woman get together, but I'm staying away from the food.

    Bis spaeter
