    Boite a lunch (Lunch Box Thread)

    Hi everyone.

     

    Thought I would try my hand at a new post.  If everyone likes this, then I will do this on a regular basis.

     

    Many of us have young children that attend pre-school and elementary school.  If you're like me, feeding them healthy is important factor.

     

    We could share different ideas/recipes for putting inside the "boite a lunch" (lunch box), helpful advice on shool-related items, you can rave about your kids/toddlers/babies (I simply LOVE kids and their innocent minds).

     

    So, here goes nothing.

     

    I made this salad for my kids (for school) and the 3 older ones loved it!!!!!!!!!!!  I prepared it the night before, and split it into 3 containers.  The leftover was saved for my little one and myself for lunch.  (Very yummy)

     

    Oriental Pasta Salad

    4 to 6 servings

     

    3/4 cup mayonnaise

    1/4 cup light soya sauce

    Drizzle of sesame oil  (or use vegetable oil)

    1 tsp fresh ginger, chopped fine or you can use 1/4 tsp ground ginger

    1/8 tsp Cayenne pepper

    8 oz store-bought fine-herb fettuccine, cooked and cut up into smaller strands

    1 red bell pepper, sliced thin

    1 cup cucumber, cut into thin strips

    1 cup sweet peas, blanched

    3 green onions, sliced

    1 cup chicken ( leftover chicken), cut into thin slices

     

    In a large bowl, mix the mayonnaise, the soya sauce, the sesame oil, ginger and Cayenne.

     

    Add the fettuccine and the balance of the ingredients; mix well to coat.

     

    Cover and refrigerate 1 to 2 hours or overnight, to let all the flavors marinate well.

    This sounds very tasty...I have no "kids" except my DH...LOL!!!  But I think he'd enjoy this.  I bet slivered almonds would add a nice crunch...or chow mein noodles (before serving, or they'd get soggy).

    I "second" the great idea. Thanks for thinking of it. I try to take my lunch as much as possible and this should give me a great variety of recipes. I'll be checking back often.

    Milto, I love this idea. I have 3 young children at home. Our oldest two are in school and lunches get to be B-O-R-I-N-G at times. Our oldest is a super fussy eater, so that doesn't help things either. Our youngest is going to be 2 in just two weeks, but she tends to be a little fussy too. Your recipe sounds tasty. Thanks for starting this. I don't get on this BB every day, but I will look for this post if you're going to continue it! Nickie

    Good Morning to Sparty, dessert1st and Nickie and anyone else who decides to stop on in.

     

    I'm glad that the three of you like it so far (LOL).

     

    Kids are home from school today, again.  They seem to have Ped Days quite often.  Too bad I didn't when I was younger.............I used to mark down my calendar until National Holidays!!!!!!!!!!!!

     

    I'm thankful that my 3 older kids (11 to 8 yrs old) are not fussy eaters.  They are willing to try everything and ALMOST anything at least once.  If they try it and don't like it, then I will honor their decision.  Now, don't get me wrong, I don't give up on that particular "dish" or food item, I just try at a later date with some changes.

     

    DH is not fussy either and neither is our toddler.  She eats anything, including Mussels in a Wine Broth.

     

    In our region (Canada), the school boards are VERY fussy when it comes to packing kids' lunches.  The school that my kids' attend is Nut Free and chocolate is allowed at times to slip through the cracks.  It's a matter of allergies.

     

    I will check back later............I'm off to work for a few hours (I work once a week).

    This post is a great idea. I am a empty nester, but I do take my lunch. Take out after so many years is just "yuk" now.  This fruit salad is still a favorite of my children.

    I small box instant vanilla pudding
    1 apple chopped
    1 can of peaches, drained
    1 can of pineapple chunks, keep juice
    Then start adding your favorite fruits,
    grapes, mandarin oranges, chopped
    pears.  Take the pineapple juice, and stir
    in the dry pudding mix. I use the sugar free, and I
    don't use the whole box. There is enough sugar
    in the juice from keeping the apples from turning brown.

    This keeps in the refrigerator for several days,
    and can looks very pretty in a glass bowl. I serve
    this on holidays, with some maraschino cherries,
    coconut sprinkled on top, looks very festive.

    Thanks for the fruit salad...............the kids enjoy stuff like that.  Ever since their school did a hands-on demo on how to make different fruit salads (per grade), they have taken a liking to it.

     

    Will pop in later on.........have to run to the market for some groceries.

    You have a fabulous idea here!!!!!! But I think you should edit your thread title to get more notice and so people know what your idea is.

    I think it will be a huge thread!

    Hi Redawna

     

    Thank you for what you wrote.  Means alot coming from you.  One quick question.............could you let me know how to "edit".  You could send it through my email, if you wish.

     

    Trying to calm Sophie down (my 23 month old).  She's been sick with the stomach flu, hardly eating, hardly drinking, and very clingy.  Today, she's kept her food down, has drank, but is still clingy..............she's actually on my lap watching me type.

     

    DH is helping prepare supper tonight.................I can't  cook and have a "monkey" in  my arms.

    I asked DH to start the Breaded Tenderized Steaks and I will finish up with the mashed potatoes, steamed broccoli & cauliflower and a nice salad.

     

    While I was at the market I noticed this new line of chips.  They are baked, no Trans Fats and believe it or not, they are BLUE...................BLUEBERRY-FLAVORED CHIPS!!!!!!!!!!!!!   I didn't buy them tonight, will open subject during supper with the family .  If they're willing to try them, I'll stop and get them tomorrow and will let everyone know. 

     

    I bought this book while I was shopping and will post some recipes for lunch-box ideas (young and old).  I just have to translate (the book is in French)...............too bad my French teachers from elementary/High school can't see me now!!!!!!!!!!!!!  I used to hate learning French.  Found that it involved too much effort and thinking.  Now, I'm fluent in speaking, writing and reading.  (pat, pat myself on the back).  Actually, my whole family is fluent in French. 

     

    Okay, gotta go pop in the kitchen and see if there's any counter space left.................What is it with most men and taking up ALL the counter-tops while they are cooking?????????

    Hi Milto, sorry to her she is so sick, I hate this time of the year when there are all these bugs. Both my kids were sick right through Christmas.

     Glad your DH can help with you meal. Sounds good by the way!  As for the blueberry chips, that sounds interesting to say the least.

    Good job on the French, I took it in junior high but that is it. It is good that your kids are bilingual.

    You should be able to right to you very first post on this thread and hit the edit button. Then you can just change what it is you want changed.  Just go to the suject line and change away!Very easy to do.

    Milto, sorry to hear that your daughter is sick. :( When is her birthday???? Our youngest is 23 months as well. Actually her birthday is in just 2 weeks, on February 8. WOW! Can't believe she'll be 2 already! We have 2 boys as well. Our oldest is 9 1/2 and our younger son is 6 1/2. We were suppose to be going to my inlaws for dinner tonight, but DH got stuck working late. He's self employed and this is his really slow time of year. Sooooo, he desperately wants to get this job done tonight so he can get paid. So, guess we're going to their house tomorrow night now. So, dinner tonight was simple & easy since I wasn't planning on having to cook tonight. Oh well, nobody complained! Hope everybody has a good weekend. ~nickie

    By the by, asked the kids over supper if they wanted to try the Blueberry-Flavoured Chips.

    The answers were................Yuck, Gross Man, Blue????, and last but not least...........You got to be kidding me, man.  (I'm glad to see that my "Angels" can express themselves so well).  Yup, no shyness in this family.  (LOL)

    Hi Nickie,

     

    Missed your post.........we were typing at the same time.

     

    Sophie will be 2 years old on Feb. 10th.............So, your little one is an Aquarius, also.  Does yours sleep???  Every Aquarius that I know, is an insomniac.  That includes my toddler.

     

    I have 2 boys (11 1/2 yrs old and 8 1/2 yrs old) and two daughters (10 1/2 yrs old and almost 2 yrs old)
