    Recipe Request ~`Beer Batter~~

    Here you go Rhonda, It is very easy. I just use equal portions of flour and beer,salt and pepper. Sometimes I add spices as well, like paprika, or Italian seasoning for Eggplant or Zucchini, a little thyme is good for deep fried mushrooms

    A couple of splashes of hot sauce. For wings and onion rings.

    And lately I take a package of good seasonings Italian or Garlic dry dressing mix and just eye ball the amounts. Sprinkle that into the flour.Then add the beer.Corona Light or Amstel Light are good ones to use because they do have a little heavier flavor and are not on the sweet side.

    I add Dill weed or sometimes old Bay if I am frying fish to the flour.

    Thanks Rhonda, It is a very simple recipe, Just season up your flour, then add the beer, you could use seltzer water too in stead of the beer. I make it up in advance too with no problems~~

    Milk can also be used in place of the beer or seltzer.

    Just curious, when you do eggplant do you salt it first?  I've seen several recipes where they salt the eggplant and let it sit to take out some of the moisture, then rinse it & prepare it as usual.

    I have made it both ways and I think that when you deep fry it it doesn't make that much of a difference~   I have also soaked it in milk to cut the bitterness that eggplant can have sometimes~    If you have never used Italian  eggplant  before you are in for a surprise.  I used it for the first time several years ago and it is wonderful~  Less seeds  and its even milder~   Janie
