    Someone posted this on another thread and I thought it would be great for you German Ladies to share. I think it sounds delicious!

     

    Amish Ham Salad

     

    Ingredients

     

    1 pound of sliced ham, juliened into strips

    1 pound of swiss cheese, grated

    1 pound can of sauerkraut, well drained

    1 Tbs caraway seed

    1 Tbs finely chopped dill weed

    Mayonnaise to bind

    Rye Bread

     

     

    Combine all ingredients and spread onto the bread slices~

    Crab and Shrimp Wonton Cups


    4 oz cream cheese, softened
    chopped green onions and chives
    8 oz imitation crab meat, chopped
    24 cooked shrimp
    salt & pepper to taste (I also added tarragon and spices of choice)
    1 pkg wonton wrappers
    4-6 oz shredded mozzarella and monterey jack



    Mix cream cheese, green onions and crab. Add spices, salt and cheese ~ reserving some of the cheese. Push 1 wonton wrapper in mini muffin pan and bake at 350 degrees for five minutes. (Can make wrappers ahead 1 day.)
    Put a teaspoonful of mix into wonton cup and top with 1 shrimp & pinch of cheese. Bake 350 for 5 minutes until bubbly and cheese is melted!

    Mindy's Quiche
     
     
    Pillsbury pie crust
    1 Cup whole milk
    1 Cup half-n-half
    4 eggs
    1 box frozen chopped spinach thawed and drained (vary your ingredients here!)
    1 2 Cup package shredded cheese (use your favorite blend)
     

    Mix all together; pour into pie crust and bake at 350 for 1 hour or until golden brown and set.
     
     
     
    Sausage and Cheese Balls

     

     


    12 oz shredded cheddar cheese
    1 lb hot, spicy sausage (mild is fine too!)
    3 Cups Bisquick mix

     
    Mix all together well. Shape into balls. Bake on cookie sheet at 350 degrees until brown, about 20-25 minutes.

    Spinach Salad with Honey-Brown Butter Dressing

    4 T butter
    1 shallot, chopped
    1 T red wine vinegar
    2 t honey
    salt and pepper to taste
    6 loosely packed cups baby spinach


    Melt the butter in a small skillet over medium heat. Add the shallot and cook until the shallot is tender and the butter turns brown color, 2-3 minutes. Remove from the heat and stir in vinegar, honey, and salt and pepper. Pour over spinach in a bowl and toss.
     
     
     
    Crockpot Taco Bake

     

    1 pound ground chuck (or ground turkey)
    1 onion, chopped3/4 cup water
    1 package taco seasoning mix
    1 15oz can chopped tomatoes with green chilies
    2 8oz cans tomato sauce
    1 8oz package shell macaroni, uncooked


    Brown ground meat in skillet with onion. Drain. Add the water, seasoning mix, tomato and green chilies, and tomato sauce. Simmer for 20 minutes. Stir in macaroni and transfer to crockpot. Cover and cook on Low for 6-8 hours. During the last 30 minutes, sprinkle with 2 cups shredded cheddar cheese.

    Sour Cream Cornbread

     


    2 T shortening
    1 Cup self-rising cornmeal
    1 (8 1/2oz) can cream-style corn
    1 (8oz) carton sour cream
    1/4 Cup vegetable oil
    3 large eggs, lightly beaten

     

     Heat shortening in an 8-inch cast-iron skillet at 425 degrees for 5 minutes or until skillet is almost smoking.Meanwhile, combine cornmeal and remaining ingredients, stirring just until moistened. Remove skillet from oven; spoon batter into hot skillet. Bake at 425 degrees for 20 minutes or until golden

     

     

    Stuffed Shells

     

    1lb Jamestown mild OR hot sausage

    1lb ground beef

    minced garlic OR garlic powder

    1 package jumbo pasta shells

    1 jar spaghetti sauce of your choice

    Italian bread crumbs

    2 cups mozarella cheese, shredded

    2 eggs

     

    Brown sausage and ground beef together with garlic. Drain and set aside. Cook jumbo shells and drain and set aside to cool. In a large bowl, combine meats, bread crumbs, eggs and 3/4 of shredded cheese. Pour 1/2 of sauce in 9X13 pyrex dish. Fill shells with generous portions of mixture. Place in dish and once all shells are in the dish, cover with remaining sauce. Sprinkle with remaining cheese. Cover with foil and cook in a 350 degree oven for 30-35 minutes.

    Hi Ladies :)

     

    Erna, lol, about "screaming Benjamin."  Nothing is more frustrating than a screaming baby; they can keep it up for along time - my nephew was just that.  My two were easy babies - but when sis asked me to watch her oldest - none of my mothering skills would help.  This kid just screamed; not cried.  DH said "I'll handle it."  Went into the kitchen, came out with a bottle and gave it to little Greg (who was about 18 mos. at the time).  Silent a few minutes later.  I said "What did you do"?  He said "Oldest Italian trick in the book, fill a bottle of water and put alittle red wine in it, my aunts did it all the time for fussy babies."  DH said the wine soothed the digestive system along with the water and made the baby sleepy, then you burp them and they sleep.

     

    Shannon, what's your avatar?  Can't make it out.  Ohhh, fish & chips, my favorite.  Yes, many times traveling with DH it was just me and the kids while he was doing business.  If your FH is a businessman, you're going to know how to be by yourself - it's nights of his obligatory business dinners (you're not invited), business breakfast meetings, etc.  But, DH always makes sure he sticks us in a nice hotel that has excellent room service - I luv room service.

     

    Renate, what a view you must have - snow covered mountains.  Am going to make the Christmas cookie recipe you send for Petticoat tail cookies - my guys love cookies.  Grrr, the last batch of cookies, the doggies ate them (guess they must have been good).

    20 Minute Skillet Salmon

    From: Kraft 

    1 tbsp oil

    -
    4 salmon fillets (4 oz each)
    -
    1 cup fat free milk
    -
    1/2 cup light cream cheese
    -
    1/2 cup chopped cucumber
    -
    2 tbsp chopped dills or 2 tsp dried
     

    Instructions
    1)
     
    Heat oil in skillet on med. high heat Cook salmon 5 min on each side (till flaky) Cover with foil
    2)
     
    Mix milk and cream cheese in skillet, stir in cucumber and dill
    3)
     
    Return salmon to skillet, cook 2 minutes

    Twinkle I am saving money right now to do our dining room next!!! I can't wait to get started!!! I know exactly what I am going to do in the room so I am anxiously waiting!! LOL!

    I don't get paid on the days that I am off, because I just work part time.. :(  He is a good employer, so I can usually make up my time the next week or so....

     

    All the recipes sound good! I am going to put them in my favorites...:)

    Yes, Jet and Lydia, my avatar is my engagement ring! I can't stop staring at it. The pictures just don't do it justice. There is some antique looking scroll work along with some rose gold and diamond chips going down the sides below the pink diamonds (which you can't see any of this in the pic) but it's just gorgeous! Scott did a very good job having this made. I told him I couldn't get mad at him now for at least a month. lol And that's the easy part because he's going to Malaysian and I'm going home. tee hee hee. I might get to go over there for a week. Just depends on the price of an airline ticket. Food there is weird but I like it. 

     

    Going to Bath tomorrow and I can't wait! It's so beautiful there! We're taking the train, like that too. Well, that's it for now. Talk to  you all later.

    Alissa, it is so sweet of you posting those low fat recipes. I went today to Nordstrom and for the first time tried on a MOTB dress. It was nice, but not the right style. The sales lady was very nice and took my business card, (hee,hee - sounds like I am a CEO) and told me she would call if new dresses arrive. If I order from online, I could return it at the store, which I like. Well, my diet went out the window, because I had lunch at Nordstrom, which was a tuna sandwich, panini style, very fattening.

    Lydia, my DD was the easiest baby to raise. Very rarely that she ever cried, except eating was a big problem. I always felt she is not getting enough food. She was very tiny, till she started school and than she just never stopped growing and caught up with everyone. Now she is about 5 foot 6" and weights 130 pounds. She works out as much her time permits and is very health concious. DH and I get lots of lessons from her about being overweight. Her fiancy is skinny too. I have to say though, when she comes to visit she loves my cooking and request certain meals, fattening ones.

    Renate, I have no intentation to fly to Germany this year, but maybe next year for the last time. I have no desire for Germany, just sometimes I miss my sisters a little bit. Germany is very expensive for the Americans now and I find most the things I used to bring back, here now. After 34 years in the US, I feel and think like an American. I choose to live here and wouldn't change it for anything. My girlfriend is leaving for Germany the 2nd of March and it will be interesting what she has to tell when she comes back. When are you leaving?

    Shannion your ring looks beautiful, even that it doesn't show the real beauty. Have fun in London and don't get kissed to much from strangers. Your fiancy might gets jealous.

     Jet, it is excitng when you remodel. I did it last year and knew, just like you, what I wanted and I got it. The only thing I would change are the tiles in my entry and kitchen. I hate to clean them, because their are kind hard to wipe, but the good thing of it, they don't show the dirt. Hee, Hee!

    Guess what??? we are getting more snow/ice/rain tonight and tomorrow! Arn't you excited to come home to that???? LOL! Hopefully by sunday it is suppossed to clear up though....it sounds like you are having a really good time!

     

    I got a cookbook at the library that has some really good sounding recipes in it.....hopefully I will get a chance to post some later...

     

    I went and got dh from work tonight and on the way to excersise, we passed this house that was on fire! I hope everyone got out okay!!  The flames were shooting way up in the sky and the smoke was really bad, so I wondered if it was some kind of explosion??? It looked really bad.....I feel so sorry for whoever lived there...... I'm sure it will be in the paper tomorrow...

    Pear Nut Bread served with Citrus Cream Cheese

     

    ingredients

     

    14-oz box of Nut Bread Mix ( 1 box)

    1/8 tsp nutmeg

    1 Bartlett pear, diced about 1-1/4 cups

     

    Prepare the bread mix as directed on the box except, use the pear mixture to replace 1/2 of the liquid required in this recipe. Add the nutmeg and mix well. Pour into a greased and floured 8x4x3" loaf pan and bake as directed on the box.

     

    Combine 1-8-oz package of softened light cream cheese ( or Neufatel) cheese with 1 Tbs of grated orange zest.  Mix well and serve with the bread~  Janie
