I've been making Butter Cremes and Peanut Butter Cremes for 30 yrs. Every year, I say I'm going hand over the torch to my sister-in-law, but I'm just a glutton for punishment! I microwave my chocolate in a pyrex bowl. I drop a piece of (frozen) candy in the chocolate, upside down. With a fork, I flip it over to coat it, then tap it on the edge of the bowl and drag it on the edge, to scrap off the excess. Then I use one of those turkey "needles" (used to lace up a turkey), and push it off the fork with that. I dipped 23 dozen last week. I didn't time myself, but I didn't take too long, cause my feet didn't hurt by the time I was done! (if I'm on my feet too long, in one spot, I pay for it)
