    Hello,

    I am looking for some new camping recipes that do not use alot of ingredients. I am looking for fast, easy recipies either for cooking over a campfire or over a propane stove. Any sort of drinks, snacks, deserts, or main dishes.

    This is one of our family's favorites.
     
     
    FOIL CHICKEN 'N RICE

    4 chicken breasts
    2 (10 1/2 oz.) cans cream of mushroom soup (or chicken soup)
    1 1/3 c. uncooked instant rice

    Cut 4 (14") square pieces, doubled foil. Place a chicken breast in the center of each one. Mix soup and rice together and spoon over chicken breasts. Sprinkle with paprika if you wish. Wrap securely in foil. Place on grill,. Cook about 40 minutes or until done, turning once. Serves 4.

    Do you have pie irons? Here are a few ideas I've collected over the years:



    PIE IRONS

    Always butter the side of bread you are putting against the iron.

    ~ pizza pies (ground beef, bacon cheese)

    ~ taco meat, salsa, cheese, onion, peppers, made in tortilla shells

    ~ eggs, cheese, ham

    ~ cheese, deli meat

    ~ pepperoni, mushrooms, onions, cheese, pizza sauce

    ~ bacon, tomato, cheese

    ~ peanut butter, chocolate

    ~ favorite pie filling

    ~ peanut butter, jelly

    ~ banana, chocolate chips, marshmallows

    ~ cream cheese

    ~ cream cheese, strawberry jam (My favorite!!)

    ~ cream cheese, pie filling

    I make this filling at home, put it into smaller containers and take one with us every time we go camping.


    PIZZA POCKETS

    1 lb. ground beef, browned
    1 pkg. bacon, chopped and fried
    1 lb. cheese, grated
    1 onion, diced
    1 green pepper, diced
    1 jar spaghetti sauce
    1 can mushrooms

    Mix all ingredients together. Freezes well. I omit the green pepper and mushrooms because the kids don't care for it.

    Home: Spoon onto hamburger buns and broil.

    Camping: Sandwich between 2 slices of bread in pie iron and cook on camp fire.

    We always make hobo dinners. I make the burgers at home, freeze them and take along as many as we'll need. 


    HOBO HAMBURGERS (Paula Deen)

    1 - 1 1/2 pounds ground beef
    1 cup cracker crumbs
    1 egg, beaten
    1/4 cup lemon juice, optional
    1 cup grated cheese
    1/2 cup chopped green pepper
    2 teaspoons Lady's House Seasoning, (1 tsp salt, 1/4 tsp pepper & garlic powder)

    4 medium red potatoes, sliced thin
    1 large onion, sliced thin
    4 carrots, peeled and cut into strips
    4 slices bacon

    In a large bowl combine ground beef, cracker crumbs, egg, lemon juice, cheese, green pepper and House Seasoning. Mix well. Shape into patties.
    Place a patty onto 2 layers of heavy-duty foil (enough to cover and close). On each patty, place potato slices, onion slice, and carrots. Slice bacon in 1/2 and place both slices on top. Seal foil tightly and cook on campfire or in a preheated 350 degree F oven for approximately 45 minutes.

    Yummy dessert!

    CHOCOLATE PEANUT BUTTER WRAPS

    1/2 cup creamy peanut butter
    4 (8-inch) flour tortillas
    1 cup miniature marshmallows
    1/2 cup miniature semisweet chocolate chips

    Spread 2 Tablespoons of peanut butter on each tortilla.
    Sprinkle 1/4 cup of marshmallows and 2 Tablespoons of chocolate chips on half of each tortilla.
    Roll up, beginning with the topping side. Wrap each tortilla in heavy-duty foil; seal tightly.
    Grill covered, over low heat for 5 to 10 minutes or until heated through.

    Another good dessert we enjoy:

    CAMPFIRE FRUIT COBBLER

    Topping (can be mixed at home and taken in sealed container):
    for each serving, mix
    1 tbsp quick oatmeal
    2 tbsp Bisquick baking mix
    1 tsp brown sugar
    1/2 tsp cinnamon

    Skin, core, and dice 1 large apple or equivalent fruit such as peaches, pears, and place on square of foil. Top with 1 serving worth of topping mix. Bring 2 ends of foil together over fruit and double fold to seal, fold over ends and seal. Place packets directly on hot coals or grill for about 15 minutes. Carefully peel back foil and enjoy!

    Our whole family loves this one. Chocolate AND camping!! Does it get any better??

    CHOCOLATE FONDUE

    2 bags semi-sweet chocolate chips
    1/2 cup fresh or canned milk

    Cut up chunks of the following: apples, bananas, pears, dried apricots, blueberry or banana muffins, rice crispy treats, pretzels, popcorn, marshmallows, strawberries, etc.

    In a small sauce pan melt chocolate with milk on grill over campfire stirring frequently. Take chunks and dip into chocolate. This can also be made with white chocolate chips, or caramels.

    FOIL SURPRISE DINNER

    1 package of favorite sausage, sliced
    1 green pepper, sliced
    1 onion, sliced
    1 package fresh mushrooms, sliced
    1 package hash browns
    garlic powder, salt, pepper to taste.

    Mix ingredients, spoon onto pieces of foil, roll up ends to seal. Grill packages until done.

    Skillet Dinner

     

    1 lb ground beef

    1 pkg onion soup mix

    1 cup water

    Pepper

    5 large potatoes

    1 can corn, drained

     

    Brown ground beef in skillet over campfire or grill. Drain. Add soup mix, water, pepper and potatoes. Cover and simmer until potatoes are tender. Add corn, heat through. Serves 4

    This is how I usually make my menu:

    Every other day for breakfast we have cereal and toast. The breakfasts in between we alternate between bacon, eggs, hash browns & toast and pancakes & sausages. Sometimes for a treat I'll make sticky buns with a tube of refrigerated biscuits.

    On the days we have big breakfasts we don't have lunch, just an afternoon snack of watermelon or chips, etc... and an earlier supper. If we do have lunch we make hot dogs, pie irons, mac n' cheese, grilled cheese sandwiches...

    For supper we make:
    hamburgers
    chicken on grill, mashed potatoes, corn
    spaghetti/sauce (sauce made at home), garlic bread
    sausage, potatoes, carrots in foil
    chicken breasts/rice/soup in foil
    chili (made at home), macaroni, carrot sticks
    hobo dinners/corn on the cob
    steak/baked potato
    sloppy joes (made at home), rolls
    pork chops, potatoes and veggies cooked in foil pkg

    Dutch oven ~ chicken, potatoes, corn and cream of chicken soup

    Skillet dinners - ground beef, potatoes, veggies, etc…
    kabobs - cubed chicken breast, precooked potatoes, peppers, mushrooms, onion, cherry tomatoes

    dessert:
    smores made with chocolate striped cookies and marshmallows
    campfire fruit cobbler
    popcorn
    fondue
    chocolate peanut butter wraps

     Hello everyone,

    I am new to these boards as of today and I have received so many kind welcomes.

    My husband and I are avid campers,as a matter of fact, we are getting ready to leave on our first trip of the season in 2 weeks.

    Another camper we met last year shared her recipe for what she calls campfire potatoes with me last year and it became an instant hit with us and our family when thy visit.

    5 large russet potatoes

    2 large sweet onions 

    2 large green peppers

    put all of this in the middle of 3 layers of foil put 3 pats of butter about a tsp. each on top and sprinkle with parmasean cheese.  Wrap tightly and cook ofer your fire.
