    apple pie

    I am frustrated that i can not find this apple pie recipe that i made last fall! It was the best apple pie. I got the recipe from taste of home website and can no longer find the recipe. Weird! So i am turning to you all for help. This recipe called for apples with lots of cinnamon(i was surprised at the amount) and caramel ice cream topping. part of the topping was poured on the crust and then the apple mixture and the a crumb mixture and the remaining caramel topping. Does anyone have that recipe and can tell me the name and where to find it. Thank you so much for your help.

    I know this is probably not the recipe that you requested, but I typed in Cinnamon Apple Pie with Caramel Ice Cream topping and did a search and this came up.  It's a Blue Ribbon recipe, so don't know if I can post it here or not.

     

    I thought I had saved the recipe that you mentioned, but cannot find it in my Recipe Box, and can't remember what web site I might have seen it at. I'll continue looking if my 4 yr. old grandson allows me to spend the time at the computer. 

     

    Apple Crisp Pizza

    While visiting a Wisconsin apple orchard bakery, I tried this tempting treat. At home, I put together this recipe. My family thinks it tastes better than the one used by the bakery.     TIME: Prep: 15 min. Bake: 35 min.

    Ingredients:

    • Pastry for a single-crust pie
    • 2/3 cup sugar
    • 3 tablespoons all-purpose flour
    • 1 teaspoon ground cinnamon
    • 4 medium baking apples, peeled and cut into 1/2-inch slices
    • TOPPING:
    • 1/2 cup all-purpose flour
    • 1/3 cup packed brown sugar
    • 1/3 cup rolled oats
    • 1 teaspoon ground cinnamon
    • 1/4 cup butter, softened
    • 1/4 to 1/2 cup caramel ice cream topping or caramel apple dip
    • Vanilla ice cream, optional

    Directions:

    Roll pastry to fit a 12-in. pizza pan; fold under or flute the edges. Combine sugar, flour and cinnamon in a bowl. Add apples and toss. Arrange the apples in a single layer in a circular pattern to completely cover pastry. Combine the first five topping ingredients; sprinkle over apples.
        Bake at 350° for 35-40 minutes or until apples are tender. Remove from the oven and immediately drizzle with caramel topping or dip. Serve warm with ice cream if desired. Yield: 12 servings.

    Here's another recipe that came up in the same search.  This one makes 2 pies, and uses Caramel Ice Cream Topping also.

     

    Pecan Apple Pie

    Taste of Home

    From Kalamazoo, Michigan, Anne Betts shares, "My husband often begs me to bake this extra-special crumb-topped pie for dessert."

    SERVINGS: 6-8

    CATEGORY: Dessert

    METHOD: Baked

    TIME: Prep: 30 min. Bake: 50 min.

    Ingredients:

    • Pastry for double-crust pie (9 inches)
    • 1 cup sugar
    • 1/3 cup all-purpose flour
    • 2 teaspoons ground cinnamon
    • 1/4 teaspoon salt
    • 12 cups thinly sliced peeled tart apples (about 10 apples)
    • TOPPING:
    • 1 cup packed brown sugar
    • 1/2 cup all-purpose flour
    • 1/2 cup quick-cooking oats
    • 1/2 cup cold butter or margarine
    • 1/2 to 1 cup chopped pecans
    • 1/2 cup caramel ice cream topping

    Directions:

    Line two 9-in. pie plates with pastry. Trim and flute edges; set aside. In a large bowl, combine sugar, flour, cinnamon and salt; add apples and toss to coat. Pour into pastry shells.
        For the topping, combine brown sugar, flour and oats; cut in butter until crumbly. Sprinkle over apples. Cover edges loosely with foil. Bake at 375° for 25 minutes. Remove foil; bake 25-30 minutes longer or until filling is bubbly. Sprinkle with pecans; drizzle with caramel topping. Cool on wire racks. Yield: 2 pies (6-8 servings each).

    I think I found it.  I'll send it in a personal message to you, to make sure you see it.  Lots of cinnamon, and it sounds just like the one you mentioned.  It's also a Blue Ribbon recipe.

    • 7 cups sliced peeled tart apples
    • 1 teaspoon lemon juice
    • 1 teaspoon vanilla extract
    • 3/4 cup chopped pecans
    • 1/3 cup packed brown sugar
    • 3 tablespoons sugar
    • 4-1/2 teaspoons ground cinnamon
    • 1 tablespoon cornstarch
    • 1/4 cup caramel ice cream topping, room temperature
    • 1 unbaked pastry shell (9 inches)
    • 3 tablespoons butter, melted
    • STREUSEL TOPPING:
    • 3/4 cup all-purpose flour
    • 2/3 cup chopped pecans
    • 1/4 cup sugar
    • 6 tablespoons cold butter
    • 1/4 cup caramel ice cream topping, room temperature

    Directions:

    In a large bowl, toss apples with lemon juice and vanilla. Combine the pecans, sugars, cinnamon and cornstarch; add to apple mixture and toss to coat. Pour caramel topping over bottom of pastry shell; top with apple mixture (shell will be full). Drizzle with butter.
        In a small bowl, combine the flour, pecans and sugar. Cut in butter until mixture resembles coarse crumbs. Sprinkle over filling.
        Bake at 350° for 55-65 minutes or until filling is bubbly and topping is browned. Immediately drizzle with caramel topping. Cool on a wire rack. Yield: 8 servings.
