Chardonnay Shrimp Spread
Ingredients
2 cups of cooked and coarsley chopped shrimp
1/2 cup Chardonnay wine
8-oz cream cheese
3 Tbs mayonnaise
3 medium green onions, chopped, about 3 Tbs
1 tsp dijon mustard
Crackers of choice
Place the shrimp in a small bowl and add the wine. Toss to coat, cover and chill for at least 1 hour. Drain and reserve the shrimp. In another bowl, mix the cream cheese, mayonnaise and 2 Tbs of the onions and mustard. Mix well then fold in the shrimp. If a thinner consistency is desire thin out with a small amount of the reserved wine.
For pretty presentation line a small bowl with some Bibb lettuce, add the shrimp spread and top with the remaining last Tbs of the chopped green onions~ A few pieces of chopped red pepper would look nice as well~ Serve with crackers of choice~ Janie~
