    Rec: Creamy chicken tortilla soup

    Ifound this on the back of Rosarita refried beans. It's not T@T, but sounds good , I'll make it this week.

    4 10 oz. cans Rotel diced tomatoes@ green chilies

    4 14.5 oz. cans Butterball chicken broth

    1 30 oz. can Rosarita refried beans

    4 C. shredded cooked chicken

    Fried corn tortilla strips or chips

    shredded monterey jack cheese

     Combine tomatoes and broth in large saucepan.Stir in beans, bring to a boil. Reduce heat to low and simmer 5 minutes stirring frequently . Add chicken  , heat through. Top w/ tortilla stips and cheese.

    (I would probably add a can of corn and top w/ avocado slices)

    sounds good, but I would probably cut back on the Rotel tomatos! Can't handle anything extremely hot!! LOL

    Fall is a second spring, when every leaf is a flower.

    This recipe was fast, simple and wholesome.  I made this very recipe for the first time yesterday for my boys 12 and 9 yrs.  They LOVED it!  Storebrand rotelle lookalikes must not be as spicy as rotelle, because I used Western Family's tomato onions with cilantro and lime juice.  My younger boy snubs anything with a lingering burn. 

    I added the following:  1 can of S&W corn (always crunchy with excellent fresh corn flavor), cumin, onion, garlic and chili powders and some dried cilantro. 

    I was so pleased the boys ranted about how good it was, because frankly... the male "species" sometimes just grunt and eat.  If they verbalize approval... this mom knows it's a winner.  :)  Try it!  If you like Mexican food, mild or spicy, this is a winner.  I love quality, wholesome food that is convenient to make and comes from staples I keep in my pantry.  It took me about 10 minutes to prepare.  I left it on low in a slow cooker, left for work and they had a fabulous home cooked meal for lunch.  I'm a top notch mom to boot.  You have to appreciate that.  :)  Best regards.

    This sounds great.  Don't worry about the Rotel tomatoes--they just pep the taste up--not really very hot.  I always use the DelMonte tomatoes with jalopenos and don't rally thnk they ae very hot....

    Thanks for the rec. and review and all the additional suggestions. This could be made really low fat, which is what we're trying to do right now.

    Thank you both to the poster of the recipe and the poster who gave the review, which made me put it on my weekend menu for a quick and easy Sunday night supper.
