    MUSHROOM CHICKEN

    MUSHROOM CHICKEN

    4 chicken breasts or 6 thighs,
    deboned
    1 can mushroom soup
    1 medium onion, diced
    1 large bell pepper, diced
    1 medium can mushroom pieces

    Cut deboned chicken in medium chunks. Soak in salted
    water. Roll in flour and deep fry. After frying the chicken,
    pour off the grease and saute the onion and bell pepper in the
    drippings. Stir in the can of mushroom soup and add 1/2 can
    water. Pour the mixture with mushroom pieces and fried chicken
    added into a baking dish with cover. Bake for 30 minutes at
    325 degrees. To increase the recipe, add more fried chicken and
    another can of soup and small amount of water. The onion and
    bell pepper amount will suffice.

    I like the sound of this but we try to avoid fried foods. Think I might try the same ingredients in a casserole without frying first and substitute fresh mushrooms for the canned ones.

    Thanks.. how long do you soak the chicken in the salted water?

    blueribbon...I soak it over night, in the fridge
