2 C. CRUSHED CINNAMON GRAHAMS
1 TBSP. FINELY CHOPPED PECANS
4 TBSP. MELTED BUTTER
MIX ALL TOGETHER, PRESS INTO BOTTOM AND 1"UP SIDES OF A 9"SPRINGFORM PAN. BAKE AT 350 DEGREES FOR 10 MINUTES. COOL.
FILLING:
3-8OZ PACKAGES CREAM CHEESE
1 C. SUGAR
3 LARGE EGGS
1 TSP. VANILLA OR ALMOND EXTRACT
1 C. RASINS,
1/4 C. CHOPPED PECANS,
2 LARGE GRANNY SMITH APPLES PEELED, CORED AND CHOPPED,
1/2 TSP LEMON JUICE
2 TBSP. SUGAR
1/2 TSP. CINNAMMON
BEAT CREAM CHEESE AND SUGAR UNTIL BLENDED. ADD EGGS ONE AT A TIME UNTIL BLENDED WELL. ADD VANILLA OR ALMOND EXTRACT. MIX UNTIL JUST
BLENDED.SET ASIDE.
MEANWHILE.MIX APPLES,RAISINS AND PECANS WITH 1/2 TSP LEMON JUICE, SUGAR AND CINNAMMON. SET ASIDE
TAKE 1/3 OF APPLE MIXTURE AND LAYER ON BOTTOM OF CRUST. POUR 1/2 OF CHEESECAKE BATTER ON TOP REPEAT ENDING WITH APPLE MIXTURE ON TOP.
BAKE 350 DEGREES 50-60 MINUTES OR UNTIL JUST SET MIDDLE WILL STILL BE JIGGLY. LET COOL 10 MINUTES. RUN A SHARP KNIFE AROUND EDGES AND LET COOL 1 MORE HOUR.THEN...
HEAT 1/2 C. SUGAR IN HEAVY SAUCEPAN ON MEDIUM HEAT WITHOUT STIRRING, UNTIL MELTED AND GOLDEN BROWN. REDUCE HEAT TO LOW ADD 1 C. WHIPPING CREAM AND 1/2 C. SUGAR. COOK STIRRING UNTIL SUGAR IS COMPLETELY MELTED. CONTINUE COOKING UNTIL CANDY THERMOMETER REACHES 225 DEGREES. DO NOT STIR!. REMOVE FROM HEAT STIR IN 1 TBSP. BUTTER AND 1 TSP. VANILLA. COOL TO ROOM TEMP. SPREAD OVER CHEESECAKE, DO NOT SCRAPE SIDES OF SAUCEPAN!!!.
REFRIGERATE AT LEAST 3 HOURS OR OVERNIGHT FOR BEST FLAVOR.
