I'm hoping this week will not be quite so crazy as last week, but the hectic week led to our Relay for Life group raisning well over $200,000 so it was all worth while. But I want a quiet week[;)]
Last night we went with some friends to a local buffet yea, it was frugal but not good either. I'd much rather pay a little bit more and go to the other buffet in town on a Sunday night.
Tonight we'll have either pork chops w/dijon sauce, mushrooms and brussels sprouts or some kind of ham/pasta concoction. Both of these will help to use up some odds and ends in the fridge, rather than throw them out (and I hate to waste food). I plan on making strawberry jam and strawberry ice cream this week too to use up what we're busy picking in the garde. Saturday we picked over 5lbs of them and last night it was just over 4lbs. We haven't had taco salad in a while and it's nice and easy and we both love itBurgers is another quick and easy night. I'm hoping to have new potatoes from the garden any day so they would be great with some haddock (having found a fish that hubby likes, let's use it I also saw local peas are now available at the roadside stands.
Still have quite a bit of chicken in the freezer as well as some ribs that are ready to heat or there's pizza crust dough so we have options for the other days.

Had a chance to put on chicken for sweet and sour chicken in the slow cooker, using the recipe from the TOH casseroles, slow cookers and soups book. Used up some odds and ends hanging out in the pantry and fridge - some over age carrots, remnants of a bottle of sweet and sour sauce, etc. Will be using some sugar snap peas out of my dad's garden for the last minute veggie stir in. Probably make something Mexican for a quick meal before youth group on Friday night - Dad will take care of the middle of the week! :) BBQ weather finally arrived - DH always defaults to grilled burgers. Yes, I like burgers but not necessarily 3 times a week . . . heh heh

This week will be clean out fridge week for me. Tonight we had leftover meatballs from the weekend. Tomorrow night will use up the last of the ham and cook it with some new peas from sons garden and some potatoes and have leftover cake and strawberries But our strawberries are from Wal-mart since the berries around here were done by May 16. We are so dry doubt if we will get much from our garden.
Have some leftover browned hamburger to use up so a taco salad sounds good Tasty. Thursday is night out so not sure what Friday will be, would like it to be pizza so we will see since I have all the ingredients to make it.

we grilled dogs & brats sunday evening so looks like dogs in BBQ'd beans for tonite with a little salad & the remains of the orange jello from last nite.
wedsnesday I'll cook up a big pot of pasta & have two sauce choices: blue cheese & ham sauce for DH & garden veggie sauce for me.
thursday will be a big double deck grilled cheese & chopped brat sandwich, fresh vgs. with ranch dip & brownies with a dab of cool whip
friday we'll finish off the pasta & sauces with canned fruit & what ever else I find in the fridge.
sat. we'll be at a funeral out of town so no cooking & sunday it will be an assortment of scraps.
still sticking to my $60. a week maximum grocery limit & doing OK with it . some weeks however you just run out of all the basics & have to re-load.
Oops, I should have said thanks for the ideas for using up the ham when I posted yesterday. Janice reminded me of something Mum used to make when there was leftovers - mix whatever meat with some mashed potatoes I made my version of this one day last week. Mix mashed potatoes and minced ham together with some seasonings - a little S&P and some mustard worked well - and then form into patties. Dip in beaten egg and then into breadcrumbs (kinda messy) and then fry in a little oil. Served these with some green beans I had left in the freezere from last year's garden and it made a good meal for us. Thanks Janice. I have kept the other ideas and will try them as time goes on and I have more ham leftovrs
