Here's a time- and money-saving tip from a Taste of Home reader:
"Whenever I bake potatoes for our family of six during the summer, I double the number of potatoes. I cool the extras and store them in the refrigerator until I'm ready to make potato salad. The cold baked potatoes are easy to peel with a knife. I use a pastry cutter to dice them along with the hard-cooked eggs, before mixing in the dressing. This really saves time. Plus, using the oven once for two meals saves on our utility bill."

That is a good idea! I don't like to light the grill for a couple of burgers and potatoes so that is a good way to use the grill more efficiently. Thanks for the tip.

Sorry you "did not get" my attempt at making a joke.
I sincerely hope you did not think that I did not know that they sell potato salad in grocery store deli departments. Even in our small one horse town both stores sell it. Like I said, I was making an attempt at humor since this place is getting sort of dull.
Not to worry, I will restrain myself from now on and keep my decorum if and when posting here.
I do the same thing when I have a crock pot of something going. I put a layer of foil on the top of whatever is cooking and put either a bunch of potatoes to be baked (steamed) or seasoned sliced with onions potatoes on the top in foil. The whole dinner is almost cooked and just add the salad and bread. I put extra baked potatoes in the refrigerator to be sliced later to be fried up with eggs or onions later too. Saves on electricity or gas.
how long will the bake potatoes keep in refrigerator once you bake them?
I usually have done something with them in 5 to 6 days which is plenty of time. I leave them in the foil until I slice or dice them for eggs or flour tortillas rolled up with eggs or gr. beef.
I "got it" Grelo!! Deli potatoe salad-blech! I don't even know how they make it so bad, and the potatoes they use are hard and grainy. I am partial to homemade :)
I like making my own potato salad because it is easier to adjust fat and sodium content
I'd much rather have homemade salad - I've tried deli salad time & time again for a quick and easy side dish and it fails me almost every time. I will say our local Wegman's store makes a very nice salad.
I agree about the texture of the potatoes too - I wonder if some of them use a frozen potato.

I hope you don't think I am dense or something, but do you put foil over your dinner and just place the potatoes on top to cook or do you also wrap the potatoes in foil??
I just think that is a terrific idea, esp. during this heat wave we are having. Thanks for the idea!

Grelo-Homemade potato salad is the ONLY kind my family will touch! I guess I just spoiled them.
I can't eat that deli potato salad. I have tried to doctor it up, adding my own touches etc, but it is still awful!
