my stomachy does not like to digest the skin on bell peppers I invented a new soup:
Fajita Soup.
Alison's Pantry sells a treal good Fajita mix of red and green bell peppers and onions. 2 lbs for $3.99.
I sauteed the mix in a big killet wiyth a bit of olive oil. Tried eating some of it as a vegetable and stomach did nt like it althoughy hthe taste buds did. So I put it all in the bender and liquified it.
Then put it into a small stock pot, added some home made chicken broth and some cream (in this case evaporated milk***) and viola, I had cream of Fajita soup.Enough for 8 meals for me.(froze most f it for later use). It is absolutly delicious and of course, healthy. Color is a light range because of the red bell peppers. They are not stingy with the red one in this mix.
I did not have any sour cream or I would have put a dab of it on my serving/ Would look good in a lain white soup bowl with tblsp of sour cream and a sprinkle of paprikpa or chili powder, serve corn tortilla chips instead of crackers
An economical gourmet soup and something different. (No I did not measure anything , just went by the seat of my pants so to speak.If thickend it would also make a great sauce/gravy for certain meats. If you like hot spices add some cayenne or hot sauce.
BTW, I love the frrozn Brussle Sprouts Alisons Pantry sells, same price as te Fajita blenmd for a 2 lbs package (their rep here delivers to my house). The sprouts are all the same size, about 1" in diameter and are SWEET, NOT bitter like some old ones you buy in the produce dept. And they are CLEAN, ready to be cooked. I don't buy their prepare foods, too fat, too salty and too expensive but som of the fozen veggies are very good, some more reasonable than others, their Fajita blend, sprouts, green peas peas and Rainbow Carrots (red and yellow, bias cut) are my favirites (price wise).
*** my "evaporated milk" is double/triple strength non nstant powdered milk), chaper tha buying the canned stuff thatmosst lilely is is made the same way.
That sounds really good! Love fajitas so will love this soup. I will make sure I have sour cream on hand!
