Sorry I haven't been around much lately-I just got off a 7 day shift and am exhausted! This is the first time I have had to look at my emails and jump onto this site. I totally missed last weeks menu planning, so I decided to start a new one for this coming week.
I am taking Tasty's advice and I am throwing a chicken in the crockpot tomorrow and we are having that with carrots and I am going to make biscuits to go with it.
Monday, I will use what is left and make chicken and rice with some leftover cheese thrown in for good measure. Hopefully, we will have some biscuits leftover from Sunday.
Since I haven't been shopping in almost a week, I have to pick up the basics and will see what is on sale this week. Whatever is on sale is what we are going to have during the rest of the week.
I have a hambone and some leftover ham in the freeer, so one of the days I will be making pea soup-hope that lasts for 2 days or so. Don't have time from this point on to make bread or anything due to my work schedule, so I will pick up a loaf of french bread to go with the soup.
I also have chili in the freezer and will serve that with some Jiffy cornbread.
As for the rest of the menu, either my DH will have to pick up something on the way home or something-I am on the late shift from 4pm-12:15 am. I probably won't even feel like eating at that time of the morning. Maybe a bowl of cereal or something.

From one Jan to another - I know where you are coming from. We have been so absolutely busy at work (which is a good thing I am not complaining) but it is hectic and hard to do day to day. By the time I get home I just want to unwind and my husband has to leave for his evening job.
The crock pot is my friend and I know that and need to realize it on a daily basis. I lost it towards the end of last week. Today I made a roast with lots of onions to make gravy and put it away for a meal next week. Also made extra meat loaf with potatoes and carrots. Will have meatloaf sandwiches with gravy and mashed potatoes. Took out two chicken breasts which I plan on making tomorrow - will butterfly them - pound them flat and then stuff with ham and goat cheese with sundried tomatoes and basil. Saw it on barefoot contesa today and it looked doable. Have a nice piece of swiss steak leftover (which was very tender and delicious). Have broccolli and salad in the fridge. We will get through the week - but by the end of last week I jumped on the Subway $2 cold cut combo. Don't do it often but it sure is helpful when things are stretched.
Went to the post office today to buy padded envelopes for sending my Christmas presents to my aunts and uncles. I so miss my parents at this time of year and decided to recognize my aunts and uncles. Couldn't believe while I was standing in line that I didn't take care of this in November. It seems like I was more organized in years past - now that I am older things are harder. Not impossible, just harder. Not complaining - just venting. I do know I am blessed.
When swimming at my Saturday morning deep water exercise class there was a woman who is a social worker and told me about a family who has been living in their car for at least four months. The husband and wife have a four year old daughter (who Mary said was charming and delightful) and that the mother was five months pregnant. She was working with them to get housing and the woman lost her baby. Mary said she was sad but almost realistically saying that it was the best because they are in no shape to raise another child. How very sad. I feel so guilty when I hear these things. We have so much (we aren't rich by any means) but my freezer is stocked and so is my fridge. The house is paid for and we are toasty warm with the woodburner going in the living room. These kind of things help me get my priorities straight. Maybe I need to reach out to this family through this person. Maybe that will be my Christmas present to myself.

Good to see you Janet! And Jan thanks for starting this thread. It's been so quiet around here lately. I am surprised considering the state of the ecomony.
Janet sounds like both your and I are in a better place than we were a year ago. I know I am and certainly hope you are. With me being back at work basically full-time I have been relying on quick fixes, more processed food and eating out. It seems to be a trade off. I am just not a super XXX (whatever)!
Anyway, the menu this week.....We made turkey Friday night so will be making some meals frm that. I'd also like to make corn showeder this week. Been wanting it for a while. I think with the turkey I will make a turkey and wild rice soup. Also, since there's just three of us I think I might make a turkey dressing casserole. Got some stuffing cubes in the basement.

Janet, what a nice idea if you can help that family. Yo would feel good about what you're doing and that family certainly needs some help. It's so sad that in this day and age, that hapens.
The crockpot sure is handy when we are busy. I made a prok stew the other day, sort of a sweet and sour which we had over rice. That was a really inexpensive meal as I picked up the pork stew meat for half price, everything else I used was at home already.
Last night we had a tourtiere that our friend made. They are soooooo good and we will finish that off tonight. Hubby needs a quick early meal before he goes out.
I just came across a pack of butchers sausages that I would like to use up so that will probably morph into a meal for tomorrow.. I made a lasagne last winter that used Italian sausages instead of ground beef and I fancy making that again soon, so maybe later this week.
That's as far ahead as I have thought as yet for this week
