Hello and happy Canada Day to all the other Canadians on here.
I really think I need to work on using what's in the freezer and pantry. Not only is the plan to save some cash but to give me space in the freezer when the veggies are ready.
I came across a recipe the other day for Chicken Paella. It is a Cooking for 2 recipe from a few years ago and, me thinking paella = shrimp, and hubby doesn't eat shrimp, I wouldn't have looked at it. However for some reason when it was posted this week I actually read the recipe and - no shrimp and I have everything I need for it - chicken and ham, a little bit of vegetable, rice and seasonings
In the same magazine, now that I've pulled it out, has a great looking recipe for Pork tenderloin with a peach honey mustard. Mmmmmm . We have both potatoes and peas ready now in the garden so that rounds this meal out nicely.
There's a nice looking recipe for a yellow cake (from scratch) that would make a nice dessert and probably do us most of the weekWe don't have dessert every day, but a sweet mouthful to finish a meal is good
Hot weather means salads and taco salad is a favourite in this house.
I have a half turkey breast in the freezer and it could be cooked in the slow cooker so as not to heat the whole house and would be enough to feed us for a couple of days plus lunchtime sandwiches. I also have some chicken to make a stirfry, with peppers and mushrooms over rice. Throw in either sandwiches or another main meal salad and there we have a weeks worth of dinners.

We have just finished up celebrating our towns 175th anniversary and the kids have all gone and one of the best things is that the frig is full of leftovers. Won't really have to cook much this week especially with the 4th of July holiday in the middle of the week and we will be at a cookout. So really don't have much to plan so will see how far the chicken, burgers, tacos and salads go.
Happy 4th of July to all and hopefully it is a safe one. A lot of cities around have already canceled the fireworks for the 4th because of the drought around here. Our grass is so dry that when you walk on it, it sounds like you are walking on dried leaves in the fall.

getting ready to can my 1st batch of the season Spicy zucchini relish so will work as many left overs into this week as I can find in the frzr & fridge.
tonite we'll will finish off the chicken normandy from last friday with corn on the cob & baked potato for him & a new Brussels sprout recipe I cut from sundays paper for me.
spgty & sauce on left over pasta from saturday will work for tom. evening meal. will bake some garlic toast from left over hamb. buns & a sm. salad will finish that meal.
the BBQ'd brats in the freezer will be ready for weds. with the macaroni salad & fries i didn't get made last week.
thursday will be creamed tuna on toast, salad & jello with fruit & another veg. of some type.
friday will be fish for him & a cheese & pickle sandwich for me with mixed vgs. & butterscotch pudding & cool whip
saturday & sunday will be one of those you find it, you cook it weekends.
I actually ate some BBQ saturday & I CAN CHEW now!!!!
