It has been busy--- we finished our field seeding Monday and now have to wait for the puddles to disappear in order to seed more in the garden.  We lost a few big trees in the nasty wind we had Tuesday so there has been plenty of clean up to do there.  Our grass is just starting to grow so soon my mowing will be nonstop.  We don&amp;#39;t seem to be eating what I sort of plan.  DH often wants something else at the drop of a hat so I&amp;#39;m trying to keep a variety of super quick options at the ready.  Hopefully we will be heading out with the camper soon and I want to have some hearty soups and ready to reheat meals in the small freezer.  There haven&amp;#39;t been many sale items to encourage stocking the freezer in our stores. It was a potluck several nights and maybe not what we really desired, but it did clean out a good part of the freezers. In fact, I was astonished at how little of anything I had once it was all emptied and replaced. Looks like a lot of freezing of veggies in the next few months and hopefully meat will be on some very good sales!&lt;/span&gt;&lt;/p&gt;  &lt;p&gt;&lt;span style="font-size:medium;"&gt;&amp;nbsp; &amp;nbsp;The weather is taking its turn for summer this week, after enduring near freezing temps this past week. We may be cold again next week, the way this year has been running. Hopefully it is going to stay like summer now!&lt;/span&gt;&lt;/p&gt;  &lt;p&gt;&lt;span style="font-size:medium;"&gt;&amp;nbsp; &amp;nbsp; I&amp;#39;m going to begin tomorrow with Creamy Beef Lasagna, as the one thing we do have is lots of ground beef. Another meal will be Pork Tenderloins, something quick as I plan to finally finish my &amp;quot;spring cleaning&amp;quot; in the four bedrooms upstairs. That has been waiting for warmer weather to open windows up there! &amp;nbsp;Another quick supper will be Crab Cakes, maybe I&amp;#39;ll make a Macaroni Salad to go with, especially if it is going to be in the 80s. &amp;nbsp;That mac. salad will serve for a second supper, along with Brats or Kielbasa and baked beans. The week could end with Chicken breasts baked in an Apricot sauce. There are two bags of frozen breasts in the freezer that need to be remembered to use.&lt;/span&gt;&lt;/p&gt;  &lt;p&gt;&lt;span style="font-size:medium;"&gt;&amp;nbsp; &amp;nbsp; &amp;nbsp;The Amish Farmer&amp;#39;s Market opened this past week, on Tues. and Fri. afternoons. Used it along with Kielbasa in a jambalaya mix. I added peppers and tomatoes. I was going to use the charcoal grill but it was so terribly windy &amp;nbsp;&amp;amp; the ashes were flying thru the air so we shut off the air valves &amp;amp; put the lid on to kill the fire. I moved that cooking project indoors &amp;amp; used the grill pan . it took a while but it all got done. I will repackage it all tom. &amp;amp; toss in the freezer for quick meals on down the road. &amp;nbsp;about the only thing i will eat is maybe a dog or a brat. the rest will be for DH as he is def. a carnivore.&lt;/span&gt;&lt;/p&gt;  &lt;p&gt;&lt;span style="font-size:medium;"&gt;&amp;nbsp; we will be using up the soup &amp;amp; some of the grilled meats for the 1st few days this week &amp;amp; then my dh must be gone to take care of his parents for several days. Emptying my freezer and pantry felt so freeing.  I saved money too. And re-visited old recipes. I love a good challenge and because I&amp;#39;m new to this-- everything seems new to me!  You are doing a great job with this site!  I&amp;#39;m from Maryland- blue crab area. But when not plentiful or too expensive my family will make mock-crab cakes. No, not as great but pretty darn close!!  ------ Julie. --------         MOCK CRAB CAKES    2 cups coarsely grated zuc- chini, unpeeled (about 1 medium)  1 cup  bread crumbs or crushed crackers  1 onion, finely chopped (we grated it also)  1 tablespoon mayonnaise  1 tablespoon Old Bay seasoning  1 egg, beaten    Combine all ingredients in a small bowl (we grated the zucchini and onion into a colander so some of the liquid could drain out). The texture can be adjusted -- if it&amp;#39;s too dry, add another egg; if too wet, add more bread crumbs (we had to add a couple of tablespoons).    Heat some oil in a skillet. Form mixture into patties and fry over medium heat until golden brown on both sides, about 2 to 3 minutes per side. Dickinson is the nearest larger town, the others are Bismarck(150 mi) and the same distamce to Rapid City/SD.&lt;/span&gt;&lt;/p&gt;  &lt;p&gt;&lt;span style="font-size:large;"&gt;Our shop must give as much away as yours, they lso give to Prairie Helping Hands, a volunteer organization that helps when somebody is sick, loand medical eqipment of al kinds, (walkers, ptty chairs, anyting you can thinkof that canbe sanitized), then there is the Able Home the thrift shop donates to when they need help, they also give to&amp;nbsp;&amp;nbsp;shelter for abused women and children in a small town 25 mi away&amp;nbsp;and &amp;nbsp;do things for people in the nursing home.&lt;/span&gt;&lt;/p&gt;  &lt;p&gt;&lt;span style="font-size:large;"&gt;Don&amp;#39;t think our hosptal donates things to the thriftshop. It is a non prog fit hospital, started out being owned by the town and was later converted into a foundtion. They most likely donate linens and stufflike that to someplace else, maybe the shelter for abused women, they can always use sheets, towels, blankets and such. But you find a lot of nice scrubs in the thrfshop. I sometimes buy scrub slacks to wear in the house in the summr because they are so light, alwasy look for the ones that are at least 75% cotton but also have found a&amp;nbsp;couple that were 100% cotton.&lt;/span&gt;&lt;/p&gt;  &lt;p&gt;&lt;span style="font-size:large;"&gt;I had friends stop in te thriftshops (privately owned) in Dickinson and boy, the oil boom sure has had an effect on the prices there. They were always much higher than ours but nowthey are alomst half the price if new things. I hope the oil drilling does not come our way.&lt;/span&gt;&lt;/p&gt;  &lt;p&gt;&lt;span style="font-size:large;"&gt;Go to nd.craigslist.org and look at &amp;quot;housing wanted&amp;quot; and also at &amp;quot;rooms/shared&amp;quot; and &amp;quot;housing/Apartements&amp;quot; and look how much they want for rent for just a room to sleep in, not to metion a house.&amp;nbsp;Williston is just a big mess and Minot is not much better.They are also building like mad in Dickinson. I would say that 90% of all the oil pumped out of the ground here in ND is on private land and there will be a lot of very rich people here. About the only good thing abouut it is that the state has a good budget surplus.
