Scalloped Turkey or Chicken
3 to 4 cups cooked turkey or chicken
1 stick butter (1/4 lb.)
1/2 cup flour
Salt & pepper to taste
2-1/4 cups chicken broth
1 cup milk
2 cups toasted bread cubes
2 small onions, chopped
1/2 cup chopped celery
1/2 teaspoon salt
1/2 teaspoon sage, crumbled
1/4 cup butter (1/2 stick)
1 can sliced mushrooms (4 ounces)
Melt 1/2 cup butter or margarine in saucepan; blend in flour, salt and pepper. Cook over low heat until bubbly, stirring. Slowly stir in broth and milk; boil 3 minutes, stirring constantly.
Taste and reseason, if necessary; set aside. In a mixing bowl, lightly toss bread, onion, celery, 1/2 teaspoon salt, sage and 1/4 cup melted butter; arrange in lightly buttered 2-quart casserole baking dish. Top with turkey or chicken then cover with sauce and mushrooms. Mix well with fork to moisten the dressing. Bake for about 1 hour at 350 degrees.

Turkey Barley Soup
6 Cups Low Sodium Chicken Broth
1 Bay leaf
1 Cup Turkey diced cooked
1 Teaspoon Dried Thyme
1 Cup Pearled Barley
1/4 Teaspoon Dried marjoram
1 Onion chopped
1/4 Teaspoon Black Pepper Ground
2 Stalks Celery chopped
2 Tblsps Fresh Parsley Chopped
3 Carrots sliced
Combine all the ingredients in soup pot or slow cooker. Cook over low heat in the slow cooker for 6 hours or simmer on the stove for 1 hour, or until the carrots are tender and the barley is soft.

I like to take leftover dressing and press it in the bottom and sides of a pie pan like a crust,then fill it up with a mixture of turkey,gravy,peas,carrots,or other leftover veggies,top with slices of American or Cheddar cheese and pop it in a preheated 350 degree oven for 30 minutes.It is yummy!!

Turkey Tetrazzini
1/2 cup butter
1/4 cup flour
3 cups chicken broth
1/2 cup sherry
1/2 cup heavy cream
1/2 teaspoon oregano
1/2 cup Parmesan cheese
2 tablespoons olive oil
2 cloves garlic -- minced
1 cup scallions -- sliced
1/4 cup fresh parsley -- chopped
12 ounces mushrooms -- sliced thin
12 ounces spaghetti
2 cups cooked turkey
salt
Melt 1/4 cup butter in a heavy saucepan. Stir in flour and cook 1 to 2 minutes, but do not brown. Add broth, sherry, cream, and oregano. Cook, stirring constantly, until sauce comes to a boil. Add 1/4 cup Parmesan cheese, stirring until melted. Remove from heat and set aside.
Melt remaining butter with oil in skillet. Add garlic, scallions,
parsley, and mushrooms and saute until mushrooms are brown. Remove from heat. Cook spaghetti according to package directions until al dente. Drain well.
Combine sauce, mushrooms, spaghetti, and turkey; season with salt to
taste. Pour into greased casserole and sprinkle with remaining cheese.
Bake at 375 degrees for 15 minutes, or until bubbly.

This is one way I often use leftover turkey. I've done the same recipe with beef and chicken as well.
Oven Stroganoff
1 can (10 oz.) sliced mushrooms,with juice
1 can (10 oz.) condensed cream of mushroom soup
2 cups sour cream
3 cups water
1/4 cup dry onion flakes (or 1 small onion, chopped)
1-2 tbsps. chicken or beef bouillon powder
2 tsp. parsley flakes
1/4 tsp. paprika
1 tsp. salt
1/4 tsp. pepper
2 tbsps. cornstarch
1/2 cup water
4 cups(approx.) cooked chicken or beef, cut into bite-sized pieces
Combine first 10 ingredients in large saucepan. Bring to a boil over medium heat and reduce to simmer. Mix cornstarch into water and stir into simmering sauce until thickened. Add cut chicken or beef and stir to combine. Pour into large casserole dish and bake uncovered at 350 degrees F for 45-55 minutes. Serve over hot cooked pasta or rice.
I usually use half-fat soup, light sour cream and omit the salt when I make this. Also I use hungarian paprika for a bit more flavour.

We have always enjoyed this. No creamed soups in this.
Sweet 'n Sour Chicken or Turkey
2 c green pepper, sliced
2 c celery, cut diagonally
2 c onions, chopped
2 Tbsp veg oil
1 (14 oz) can pineapple tidbits,
drained, save juice and add water to make 2 c
5 Tbsp cornstarch
2/3 c brown sugar
1/3 c vinegar
1/4 c soya sauce
4 c cooked chicken or turkey, bite size
1. Saute veggies in oil until tender crisp. Remove from pan.
2. Combine drained pineapple juice, water, cornstarch, sugar, vinegar and soya sauce in med-large sauce pan. Cook stirring constantly, until sauce clears and thickens.
3 Add drained tidbits, veggies and meat. Heat through.
4. Serve over hot rice.
I will look for turkey pieces to cook when I run out of turkey leftovers.

Easy Chicken (or Turkey) Soup

7 cups canned chicken broth
couple of dashes pepper
2 medium carrots, sliced
2 stalks celery, sliced
1 cup uncooked medium egg noodles
2 cups cubed cooked chicken or turkey
chopped fresh parsley, optional
Mix broth, pepper, carrots and celery in a pot. Heat to boil. Stir in noodles and chicken. Cook over medium heat for 10 minutes or until the noodles are done. Garnish with parsley if desired.
Serves 6
Freezes well
Just had this for supper and its really good for 'the day after' as it is easy to put together and not too heavy. Yum.
