    Not sure what you mean...are they harboiled? In shell or out? A green rim around the yolk of a hard boiled egg means it has cooked too long.

    I've seen light green shells from certain breeds - similiar to brown egg but green. I guess the white could be dyed after it is boiled.

    I discovered over 1 1/2 yr ago that this place was deader than a door nail and don't know why they don't take it off the board. It is a waste of space and there are a few others almost like it.

    Eggs turn green on a buffet because the eggs react with the aluminium pan. Use a stainless steel chafing dish to stop the eggs from turning green.

    Hi!

    There are a couple of different senarios to consider when holding eggs on a buffet.  One;  the temperature the eggs are being held, is the buffet table heat a direct heat or steam table.  If direct heat the temperature could be to high/hot.  Two;  the amount of time the eggs have been on the buffet table.  Eggs can be persnickety.  A 20-30 minute window of being held on direct heat, with direct heat not being higher than 212 degrees F and covered is the best case for holding.  Three;  if mushrooms or olives are being stored close by the buffet table, they will cause eggs to either turn green, gray or black.  Again, eggs are persnickety.
