Zucchini Pineapple Bread
Sift and set aside:
1 tsp baking soda
1 tsp baking powder
1 tsp salt
2 cups rice flour
2/3 cup potato starch
1/3 cup tapioca flour
3 tsp xanthan gum
Mix the following in a large bowl:
3/4 cup oil
2 cups granulated sugar
3 large eggs
2 tsp pure vanilla extract
2 cups shredded zucchini
1 20 oz can crushed pineapple drained (about 1 1/3 cup)
Add dry ingredients to the wet mixture. Divide mixture between 2 loaf pans. Bake at 350 degrees about 55 minutes. (Ovens may vary) Let rest in pans for 5 minutes. Then cool on a rack.
If desired, you can add a cup of nuts or a cup of raisins. I do not. This recipe is LUSCIOUS!!!

After a day or so, I started buttering a slice, and frying it in a skillet...then topping with GF ice cream for dessert. Not a good idea for my waistline, that is for sure!
