I found a good all purpose gluten free flour that can be used for regular recipes--3/4 cup gluten free for every cup of regular flour in the recipe. If my recipe calls for 2 1/2 cups for instance how much gluten free flour would I use? It's the 1/2 that's a little confusing. Has anyone used Authentic Foods Multi-Blend Gluten Free Flour with xanthan gum right in it?

I have no idea! The only thing I would suggest, is to see if you can somehow contact the company and ask them. I have not heard of this flour, so I don't know, but they should be able to tell you what you need to do!
The flour mix I use is cup for cup to regular flour. I guess the reason I use that one is, not only is it good but I don't like dealing with what you have come up against. 'smile'

For a 1/2 cup, you would use 1/4 cup plus 2 tablespoons. I have not tried the AF MultiBlend, but that is because I cannot have xanthan gum either. I like their Classical Blend, since it doesn't have any gum in it, and I add guar gum.
