  • Blueberry Boy Bait

     2 cups flour

     

    1 1/2 cups sugar

     

    2 tsp. baking powder

     

    1 tsp salt

     

    3/4 cup vegetable oil

     

    1 cup milk

     

    2 eggs

     

    2 cups  blueberries

     

    1/4 cup white sugar

     

    1/2 tsp ground cinnamon.

     

    Combine flour, 1 1/2 cups sugar, baking powder and salt. Add oil, milk and eggs. Beat well. Fold in Blueberries. Pour batter into a greased and floured 13 x 9 cake pan. Combine 1/4 cup sugar and cinnamon. Sprinkle over batter in pan. Bake in preheated 350* F oven for 40-50 minutes or until nicely browned.

     

    I used Splenda when I made this except for the topping. If using frozen blueberries do not thaw before adding to batter or you will have a blue gray cake lol .I generally only make this with fresh berries. I beat this by hand no need for a mixer it only takes a few minutes to throw together.

     This sounds so good. Though I don't have blueberries, I will probably use blackberries. There should be more ripe ones soon.
