  • ISO Joanna Lund recipes

    Somehow I have lost most of my Joanna Lund recipe books.

    I was especially looking for a chocolate pie, butterscotch pie and a ground beef, cheese, macaroni casserole that her son loved.

    Does anyone have any of these recipes?  Or any of hers.

    Joanna Lund's Banana Split Pie

     

    Ingredients


    Instructions

    Put bananas in crust. Whisk together pudding, milk powder, pineapple, water and pour in the shell over bananas. Put in refrigerator for 15 minutes.

    TO SERVE:Top with sliced strawberries and Cool Whip. Drizzle with syrup. Top with cherries.

     Triple Layer Party Pie - Joanna Lund

     Ingredients

    • 1 package JELL-O sugar-free instanta butterscotch pudding mix 4 serving
    • 1 1/3 cups Carnation nonfat dry milk powder
    • 2 1/2 cups water
    • 1 Keebler chocolate-flavored piecrust 6 ounce
    • 1 package JELL-O sugar-free instant chocolate pudding mix 4 serving
    • 1/2 cup Cool Whip Lite
    • 2 tablespoons chopped pecans 1/2 ounc
    • 1 tablespoon mini chocolate chips 1/4 ounce

    Instructions

    In a medium bowl, combine dry butterschotch pudding mix, 2/3 cup dry ;milk powder, and 1-1/4 cups water. Mix well, using wire whisk. Pour mixture into piecrust. In a medium bowl, combine dry chocolate pudding mix, remaining 2/3 cup dry milk powder, and remaining 1-1/4 cups water. Mix well, using a wire shisk. Pour mixture over butterscotch layer. Refrigerate for about 15 minutes. Before serving, spread Cool Whip Lite evenly over chocolate layer. Sprinkle pecans and mini chocolate chiops evenly over top. Refrigerate until ready to serve.

    JoAnna Lund's Hawaiian Strawberry Pie Recipe

    The combination of pineapple and strawberries is enough to think you're in heaven."

    2 cups sliced fresh strawberries
    1 (6 ounce) Keebler graham cracker piecrust
    1 (4 serving) package Jell-O sugar-free strawberry gelatin
    1 (4 serving) package Jell-O sugar free vanilla cook and serve pudding
    mix
    1 cup (one 8 ounce can) crushed pineapple, packed in fruit juice,
    drained
    and 1/4 liquid reserved
    1 1/4 cups water
    1 cup Cool Whip Free
    1 teaspoon coconut extract
    2 tablespoons flaked coconut

    Layer strawberries in bottom of piecrust. In a medium saucepan, combine dry gelatin, dry pudding mix, reserve pineapple juice and water. Cook
    over medium heat until mixture thickens and starts to boil, stirring constantly. Spoon hot mixture over strawberries. Refrigerate for 2
    hours. In a small bowl, combine pineapple, Cool Whip Free, and coconut extract. Mix gently to combine. Spread toppint mixture over set
    strawberry filling. Evenly sprinkle coconut over top. Refrigerate at least 30 minutes. Cut into 8 pieces.

     Farmhouse Macaroni and Cheese By Joanna Lund

     A Joanna Lund recipe Crockpot

    Servings: 3 Servings

    Ingredients

    • 3 cup Cooked elbow macaroni rinsed and drained
    • 2 tablespoon Hormel Bacon Bits
    • 1/4 cup Chopped onion
    • 1 3/4 cup Stewed tomatoes undrained (one 14
    • ; 1/2 oz. can)
    • 1 1/2 cup Shredded Kraft reduced-fat Cheddar cheese (6 oz.)
    • ~- 1 can Healthy Request Cream of Mushroom Soup --

     

    Instructions

    In a slow cooker, combine macaroni, bacon bits, onion, undrained stewed tomatoes, and Cheddar cheese. Pour mushroom soup over top. Mix well to combine. Cover and cook on LOW for 6 to 8 hours. Mix well before serving. HINT: 2 cups uncooked macaroni usually cooks to about 3 cups Converted by MC_Buster. Converted by MM_Buster v2.0l.

    Jo Anna Lund's Cozy Crock Comfort
    Categories: Crockpot
    Yield: 6 Servings

    16 oz Lean Ground Beef 90% Lean
    1/2 c Onion,Chopped
    3 md Potatoes Raw Peeled,15
    -Ounces Or 3 Cups Diced
    1/3 c Rice Regular Long Grained
    -Uncooked
    1 1/2 c Carrots,Shredded
    1 c Celery,Finely Diced
    1 1/2 c tomato juice Reduced Sodium
    10 1/4 oz Healthy Request Tomato Soup
    1/4 t black pepper
    1 t dried parsley flakes
    1/2 t Celery Salt

    In a larege skillet sprayed with butter-flavored cooking spray,
    brown meat. Place browned meat in a slow cooker container. Add onion,
    potatoes, uncooked rice, carrots, and celery. Mix well to combine. Stir
    in tomato juice, tomato soup, black pepper, and parsley flakes. Cover
    and cook on LOW for 6 to 8 hours. Mix well before serving.

    HE: 2 protein, 1 1/2 vegetables, 2/3 bread, 1/4 slider, 10 optional
    calories

    Nutrtitional: 243 calories, 7 gm fat, 16 gm protein, 29 gm carbohydrate,
    290 mg sodium, 33 mg calcium, and 3 gm fiber.

    Diabetic: 2 meat, 1 1/2 starch, 1 vegetable

    **Can use minute rice without a problem. Can substitute chopped
    zucchini for the celery. Smells wonderful while cooking and tastes
    great. Definitely would make again. Can sprinkle just a little of fat
    free parmesan cheese on the top just before eating (not even a tsp full
    on a serving).

    Recipe courtesy of Joanna Lund. She is an excellent cookbook author/cook. She has many healthy cookbooks in print, the recipes are always delicious! If you are in the market for a new cookbook, take a look at one of hers, you won’t be disappointed.

    3/4 c chopped onion
    1/2 tsp dried minced garlic
    4 (6 in) corn tortillas
    1 1/4 c chunky salsa

    Healthy Jos is a staple around here, except that I use brown sugar Splenda and use about 3 T.

    My husband thinks its the best sloppy joe recipe.  In fact, we had it last night.

    Somewhere I have the calorie counts for this but I didn't find it in my master file. I'm sure I have it somewhere though.

    Smothered Hamburger Steak and Onions (Joanna Lund)

    1 lb. lean ground beef

    ¼ t. black pepper

    14 ½ oz. can beef broth, divided

    6 T. fine dried bread crumbs

    2 c. sliced onion

    3 T. all purpose flour

    In large bowl, combine meat, black pepper, ¼ c. beef broth, and bread crumbs. Mix well with hands. Using a 1/3 c. measure as a guide, form 6 patties. Place patties in a large skillet sprayed with Pam and brown on both sides. Layer onion evenly over browned beef patties. In a jar with a tight fitting lid, combine remaining beef broth and flour. Shake well to combine. Pour broth mixture evenly over onions and patties. Cover and simmer 20 to 25 minutes. For each serving, place 1 patty on plate and evenly spoon onions and gravy on top. Note: there is no milk in this recipe. I thought it was strange to have gravy with no milk in it, but this is a great recipe!

    This is another one of her recipes that I just love. I know it sounds horrible, but it is just as good as the full fat variety. My DH absolutely loved it. He and one of his diabetic friends went through a whole pan of it one time while I was at work. I don't think that was quite the intent. Nowadays you can even get reduced fat graham crackers.

    Chocolate Eclair Dessert (JoAnna Lund) (4 WW PPS)

    36 (2 1/5-inch) graham cracker squares
    2 pkg. Jello sugar-free instant vanilla pudding mix -- (4 serving size)
    2 c. nonfat dry milk powder (Carnation), divided (see recipe)
    4 1/4 c. water, divided (see recipe)
    1 1/2 c. Cool Whip Lit, divided (see recipe)
    2 t. vanilla extract, divided (see recipe)
    1 pkg. Jello sugar-free instant chocolate pudding mix -- (4 serving size)
    1 T.Hersheys chocolate syrup

    You'll find this dessert quickly becomes a family favorite. It just tastes so good, they'll think it's got to be bad, but guess what... it's good for you, too! Evenly arrange 12 graham crackers in a 9-by-13-inch cake pan. In a large bowl, combine dry vanilla pudding mixes, 1 1/3 cups dry milk powder, and 3 cups water. Mix well using a wire whisk. Blend in 1/2 cup Cool Whip Lite and 1 teaspoon vanilla extract. Mix gently to combine. Spread half of pudding mixture evenly over graham crackers. Layer another 12 graham crackers over top. Evenly spread remaining pudding mixture over graham crackers. Top with remaining 12 graham crackers. In a medium bowl, combine dry chocolate pudding mix, remaining 2/3 cup dry milk powder, remaining 1 teaspoon vanilla extract and remaining 1 1/4 cups water. Mix well using a wire whisk. Spread chocolate mixture evenly over top of graham crackers. Cover and refrigerate at least 1 hour. Just before serving, spread remaining 1 cup Cool Whip Lite evenly over top. Drizzle chocolate syrup evenly over Cool Whip Lite. Refrigerate at least 1 hour. Cut into 12 servings. Freezes well. HINT: Best if made the night before. Yield: "12 slices"
    Serving size (1 square) According to the cookbook: 179 Cal, 3g Fat, 6g Pro, 32g Carb, 519mg Sod, 1g Fib .

    I know I have tried more of her recipes, including one that was a clone sort of of a strawberry daquiri that was nonalcoholic and used Diet Mountain Dew. It wasn't bad. If I think of any more, I will post them!

    I too had lots of books.  Now only a few.

    The Strawberry Daquiri sounds good.  If you find it.
