Somehow I have lost most of my Joanna Lund recipe books.
I was especially looking for a chocolate pie, butterscotch pie and a ground beef, cheese, macaroni casserole that her son loved.
Does anyone have any of these recipes? Or any of hers.
Joanna Lund's Banana Split Pie
Put bananas in crust. Whisk together pudding, milk powder, pineapple, water and pour in the shell over bananas. Put in refrigerator for 15 minutes.TO SERVE:Top with sliced strawberries and Cool Whip. Drizzle with syrup. Triple Layer Party Pie - Joanna Lund
In a medium bowl, combine dry butterschotch pudding mix, 2/3 cup dry ;milk powder, and 1-1/4 cups water. Mix well, using wire whisk. Pour mixture into piecrust. In a medium bowl, combine dry chocolate pudding mix, remaining 2/3 cup dry milk powder, and remaining 1-1/4 cups water. Mix well, using a wire shisk. Pour mixture over butterscotch layer. Refrigerate for about 15 minutes. Before serving, spread Cool Whip Lite evenly over chocolate layer. Sprinkle pecans and mini chocolate chiops evenly over top. The combination of pineapple and strawberries is enough to think you're in heaven."2 cups sliced fresh strawberries1 (6 ounce) Keebler graham cracker piecrust1 (4 serving) package Jell-O sugar-free strawberry gelatin1 (4 serving) package Jell-O sugar free vanilla cook and serve puddingmix1 cup (one 8 ounce can) crushed pineapple, packed in fruit juice,drainedand 1/4 liquid reserved1 1/4 cups water1 cup Cool Whip Free 1 teaspoon coconut extract2 tablespoons flaked coconutLayer strawberries in bottom of piecrust. In a medium saucepan, combine dry gelatin, dry pudding mix, reserve pineapple juice and water. Cookover medium heat until mixture thickens and starts to boil, stirring constantly. Spoon hot mixture over strawberries. Refrigerate for 2hours. In a small bowl, combine pineapple, Cool Whip Free, and coconut extract. Mix gently to combine. Spread toppint mixture over setstrawberry filling. Evenly sprinkle coconut over top. Refrigerate at least 30 minutes. Cut into 8 pieces.

Servings: 3 Servings
Jo Anna Lund's Cozy Crock Comfort Categories: Crockpot Yield: 6 Servings 16 oz Lean Ground Beef 90% Lean 1/2 c Onion,Chopped 3 md Potatoes Raw Peeled,15 -Ounces Or 3 Cups Diced 1/3 c Rice Regular Long Grained -Uncooked 1 1/2 c Carrots,Shredded 1 c Celery,Finely Diced 1 1/2 c tomato juice Reduced Sodium 10 1/4 oz Healthy Request Tomato Soup 1/4 t black pepper 1 t dried parsley flakes 1/2 t Celery Salt In a larege skillet sprayed with butter-flavored cooking spray, brown meat. Place browned meat in a slow cooker container. Add onion, potatoes, uncooked rice, carrots, and celery. Mix well to combine. Stir in tomato juice, tomato soup, black pepper, and parsley flakes. Cover and cook on LOW for 6 to 8 hours. Mix well before serving. Diabetic: 2 meat, 1 1/2 starch, 1 vegetable **Can use minute rice without a problem. Can substitute chopped zucchini for the celery. Smells wonderful while cooking and tastes great. Definitely would make again. Can sprinkle just a little of fat free parmesan cheese on the top just before eating (not even a tsp full on a serving).

Somewhere I have the calorie counts for this but I didn't find it in my master file. I'm sure I have it somewhere though.
Smothered Hamburger Steak and Onions
1 lb. lean ground beef
¼ t. black pepper
14 ½ oz. can beef broth, divided
6 T. fine dried bread crumbs
2 c. sliced onion
3 T. all purpose flour
In large bowl, combine meat, black pepper, ¼ c. beef broth, and bread crumbs. Mix well with hands. Using a 1/3 c. measure as a guide, form 6 patties. Place patties in a large skillet sprayed with Pam and brown on both sides. Layer onion evenly over browned beef patties. In a jar with a tight fitting lid, combine remaining beef broth and flour. Shake well to combine. Pour broth mixture evenly over onions and patties. Cover and simmer 20 to 25 minutes. For each serving, place 1 patty on plate and evenly spoon onions and gravy on top. Note: there is no milk in this recipe. I thought it was strange to have gravy with no milk in it, but this is a great recipe!
This is another one of her recipes that I just love. I know it sounds horrible, but it is just as good as the full fat variety. My DH absolutely loved it. He and one of his diabetic friends went through a whole pan of it one time while I was at work. I don't think that was quite the intent. Nowadays you can even get reduced fat graham crackers.
Chocolate Eclair Dessert
I know I have tried more of her recipes, including one that was a clone sort of of a strawberry daquiri that was nonalcoholic and used Diet Mountain Dew. It wasn't bad. If I think of any more, I will post them!
