  • Waffle recipes
    Margie, the first is the one I use most often, but I also use the second one too. The first is from an old Country Woman magazine.

    Oatmeal Waffles

    1-1/2 c. flour
    1 c. quick oats
    1 T. baking powder
    1 t. cinnamon
    1/4 t. salt
    2 eggs, slightly beaten
    1-1/2 c. milk
    6 T. butter, melted
    2 T. brown sugar

    In a large bowl, stir together dry ingredients, set aside. In a small bowl, stir together eggs, milk, butter & brown sugar, add to flour mixture and stir until blended. Pour batter onto lightly greased waffle iron and bake.


    This recipe is passed down from my mom. It may seem difficult, but it's really pretty easy and makes delicious, light, fluffy waffles!


    Waffles

    1/2 c. butter or margarine
    2 c. flour
    1 T. sugar
    2 c. milk
    1/2 t. salt
    1 T. baking powder
    3 eggs, separated

    Melt the butter, set aside. Sift dry ingredients toether into a large bowl. In a another bowl, beat the egg yolks until thick and lemon colored. Gradually add the butter and milk, then pour into the dry ingredients; mix until smooth. Beat the egg whites until peaks form; spread over the batter and gently fold in. Pour batter onto waffle iron and bake as directed.

    Those "old" recipes are the best! I also use an old family recipe I got from my mom for waffles, that she got from generations before her... It uses part of the batter to make a sauce to use over waffles. Yummm... comfort food.
