Michelle: I've been in Florida for the last couple of weeks. My dad passed away 3/19. Then on 3/20 my sister had major shoulder surgery. I was there for the funeral and to help her as she is under orders not to move that shoulder for at least 3 weeks - it was complicated surgery. Dad was buried with full military honors with both my sons in attendance with me. It was very moving. DH did not come. I've been in a funk since I got back.
Anyway, I need some super easy, super quick dinner recipes that will tempt Matthew. He loves hot dogs and beans, but I can only eat so much of that. I can make baked eggs or grilled cheese sandwiches, but with springtime arriving I need some lighter fare. Do you have any ideas? I've resorted to TV dinners - but they have so much salt I can't take them but once a month! My problems come from Matthew's schedule & DH coming home at odd times.
Anything you could suggest would be appreciated.

Cathy I am so sorry to hear about your dad. What a great honor to have a military funeral. Also about your sister. I am sorry it has been so long since getting back to you. I haven't been on for a while. Had a whole lotta stuff going on. I will look and see what I got, I have been using my crockpot a whole lot lately. So I know I have a bunch of those.

Cathy - so sorry to hear about your Dad. My dad passed 17 years ago and I still miss him. Keep your memories close. Hope your sister is healing well.
How about BBQ chicken sandwiches? Boneless chicken breasts in crockpot with BBQ sauce. When done, shred chicken and serve on nice rolls.
That's all I've got for now...didn't sleep well last night and had a long day. Will try to come up with more.

Surprised this group/forumn is still here. I am still upset about the move!!!! (4 years later) We used to get over 200 posts on a thread a week. I knew the move would slow things down. We were a happy family over in Recipes! lol

Thanks for all the good thoughts. Dad was almost 96 & really missed mom. She passed 20+ years ago. My oldest son flew out & got to spend some rewarding time with grandpa. He very rapidly deteriorated over just 2 days & passed in his sleep. I will always remember him like the last time I hugged him...spry, great appetite, dry sense of humor, stubborn. Great memories.
Yes, I miss our "family" from the old days. Too many abrupt changes in my life lately.
So let's try to start it up again! I'll make a real effort to stop by at least once a day when I'm online... I'll start a thread today. It's been so long I know we all have new recipes we could share! I'm FB friends with Kelly and Rachelle so I'll post on my FB page that we've started again. You do the same in the event you're FB friends with others who used to participate. I'll post in recipes with a note here to look there.
