    Andrea, this recipe I made this week for the meatballs was really delish....I wanted to share it and another from Mr. Food, that looks pretty darn good....

    Jen's Incredible Baked Meatballs:

    1 pound hamburger, grass-fed if possible
    2 eggs, beaten with 1/2 cup milk
    1/2 cup grated Parmesan
    1 cup panko or bread crumbs
    1 small onion, minced or grated (1/2 a large onion)
    2-3 cloves garlic, minced
    1/2 teaspoon oregano
    1 teaspoon salt
    freshly ground pepper to taste
    1/4 cup minced fresh flat-leaf parsley or basil

    Mix all ingredients with hands. Form into golfball sized meatballs. Bake at 350 degrees for 30 minutes.

    Tip #2: If you have a leftover piece of rind from the Parmesan, let it simmer in the crock pot with the marinara sauce or save for another soup recipe. This will add a great flavor boost to most any sauce or soup.
    (this Back Yard Bean recipe is from Mr. Food....I didn't try it yet, but it sure looked good when he made it)
    Back Yard Baked Beans


    Ingredients


    2 (16-ounce) cans baked beans
    2 (2.8-ounce) cans French-fried onions
    1/4 cup molasses
    3 tablespoons real bacon bits
    2 tablespoons yellow mustard
    1 tablespoon butter, softened


    Instructions

    1. Preheat oven to 350 degrees F. Coat an 8-inch square baking dish with cooking spray.
    2. In a medium bowl, combine all ingredients except one can of French-fried onions; mix well then pour into prepared baking dish
    3. Top with remaining can of French-fried onions and bake 25 to 30 minutes, or until bubbly and the onions are golden. Serve immediately.
