question on changing flavors

    hi all,

    well here's the short of it. i'm experimenting with a recipe i got from a very old quick cooking issue. i was trying to figure out how to change the flavors slightly from an italian base to a more suited mexican/southwestern taste, despite this already being fairly nuetral. (i live in southern az and our family loves these types of foods).

    i'm using the big batch beef recipe in part to try this, but before i do, i was trying to see if anyone had already done this and if they had, where would i find it? i looked around and this site is very confusing. i expected sections of the magazine to be up in a different format than they are.

    i was also looking for something similar in that i could make a big batch of something, then use it for several recipes for chicken, but i don't know where to look or even what to look for! mainly stove top since our oven is currently down.

    any help appreciated. i'm, still learning how to really cook. i always find something new to try.

    Without seeing the recipe it is hard to say but I'd start by changing the Italian seasonings (oregano, basil, etc) for more Mexican/Southwestern ones like cumin, chili powder, chipotle, etc. Good luck.

    i was able to change it to something we liked last night in my test batch. my mom even liked it, though i have to tone it down just a bit since i was spicy. i'm going to test it this weekend in some dishes. i'll post it here too. it turned out better than i expected and the nice thing is, i don't have to add extras to it!!
