  • Need Help-frozen bread dough!!!

I tried making a chicken enchilada pizza recipe from one of my past S&D issues, which called for 1 lb. frozen white bread dough! It said to roll it out into a 15" circle but I could not get it to roll out at all and when it rolled out a little bit it just started to form back into a ball. It was completely thawed so what am i doing wrong??? I'm hoping there is someone that can help me with this!! I would appreciate any tips!   - Amber

No help, but tons of sympathy. In the days when I often used convenience foods like that, I still rarely made recipes requiring rolling out frozen bread dough.  The stuff just bounces right back, and I could never get the knack of making it do what I was supposed to.  Honestly, it's hard to work with.  For something like a pizza crust, you'd be better off using a boxed crust mix, or a simple from scratch recipe.  It probably won't take much longer!

Hi Heather, thank you for your time in responding! I thought since it was in S&D that it would have been easy but i guess not. Although it is nice to hear that it wasn't just me! :)

Hi, I recently answered a question about rolling frozen bread dough in the Ask The Pro feature. I hope this helps. First let the dough thaw until it's warm and pliable. Spray your counter with cooking spray or lighlty coat with oil. Avoid using flour, it may dry out the dough and cause it to loose elasticity. If it still springs back, try letting it rest for 15 minutes longer. Holding the dough in place for a few seconds when rolling it will also help the dough to retain the shape you want.

Any other questions, let me know and I may use it in an up comming Ask The Pro feature.

Hi Marie, I just wanted to thank you for taking the time to write me back. I intend on trying your tips in the near future, since I have several loaves of bread dough in my freezer now! :)
