At a work Christmas potluck party about 5 years ago a lady brought a cheese dip that was to die for! It had bacon, chicken and ground beef and I think it used velveeta but not sure. Anyone have something similar they would share with me and my plain old bag of tortilla chips???
This isn't what you are looking for, but is very good.
1 can Hormel chili
1 bunch green onions, chopped
1/2 can green chilies OR 1/2 cup salsa
Cut velveeta into cubes. Place in crock pot. Stir in chili, onions and green chilies. Stir every so often. You could melt in the microwave.
Some times I just use velveeta and salsa if I am short of ingredients.

I hope this helps you find the recipe that you're looking for.
