This recipe is the Second Prize winner in the Tempting Tomatoes contest, by Denise Kilbert, on page 38. I have been looking for a good gazpacho recipe for years ever since having it for the first time when visiting New Orleans. I'm so glad you're making the Cajun Gazpacho recipe from the Temping Tomato contest. I have to say, it's absolutely delicious! And to everyone reading this post, don't let the long list of ingredients deter you from trying this yummy soup. It's super easy to throw together. Just make sure to make it the day before serving to allow the flavors to meld. This is a perfect hot weather recipe.
The long list of ingredients is not a problem... I just made this, and 15 of the items are standard spices found in most kitchens. THIS IS FANTASTIC. Shrimp was on sale at my grocery store so that gave me the incentive to go ahead and try it. It's totally addictive! Just the right amount of tang to make it tantilizing. I may have it for breakfast !!! My sister is allergic to cilantro, so I left that out, and I haven't a clue as to what it adds - flavor is outstanding without it. No wonder this was a prize winner !
