Father's Day is almost upon us and I'm in the midst of planning a cookout with my family. Since we're honoring the dads in the family, I'm serving foods they like. My husband always says just keep it simple so my menu is uncomplicated picnic fare. Buffalo burgers, corn on the cob, a tossed salad, melon and a strawberry rhubarb pie for dessert. Even if you don't have a father to honor, summer is finally here and that alone is reason to celebrate! So how are you celebrating?
I'm fixing something special for my husband (father of 2 adult boys)- scallops and mushrooms (recipe from this site). Sounds good, and it isn't something I would fix all the time, because scallops aren't cheap! My boys don't like mushrooms, so I'll make them a pizza. I may pick up corn on cob to go with a little salad too.

That's an awesome deal We used to have one here like that, $10 to park and you could enjoy the day. Now they charge per person, still a good show but not an inexpensive family outing anymore.
I suspect we'll be cutting hay so the likelihood of any sort of gathering here is slim.
