I am looking for a jelly recipe made with beet juice. It tastes like a jelly my Mom used to buy called (Rex Jelly).
This jelly is very easy to prepare. It has beautiful ruby color and excellent flavor...almost a currant flavor.
5 c. water
1/2 c. fresh lemon juice
1 pkg. powdered pectin
6 c. sugar
Peel beets and simmer in water for 30 minutes, until beets are tender. Remove beets. Eat them or discard them. The cooking liquid is all you'll need for this.
Strain liquid and measure out 4 cups. Pour liquid into a large pot with lemon juice and pectin.
Bring to a rolling boil.
Add sugar, return to rolling boil, and boil one minute.
Ladle into hot sterile jars leaving 1/4" headspace. Process in boiling water bath for 5 minutes.
I was looking for a jelly my grandmother use to spread on her cake, it was red and she called it a jelly cake, it was the best taste. she called it Rex jelly, is this the same jelly which you say is made from beets?
