My Greatest Cooking TriumphI had to impress a lot of people at one time. My mother had remarried for the third time...she married in her seventies! Her "new" family was coming to my house for dinner. She brought her husband, his kids and the grand kids. These people didn't know me or my cooking!! What is the dinner for? CHRISTMAS DINNER!!!! Yes, after dinner, I was famous! I was sweating bullets through the whole ordeal, but I pulled off a moist and juicy turkey with stuffing, side dishes, desserts, and beverages. Every single item came out perfectly, and we all had a marvelous time at the party!
My Biggest Kitchen DisasterWhen I was ten, I never heard of a double boiler. So, I melted unsweetened chocolate in a frying pan. Yes, the smoke woke up my parents at the crack of dawn Saturday morning! When I was twelve, I threw a Christmas party for my school chums. The grand finale was the Christmas tree cake that I made myself. I carried the cake out to the party room, tripped, and watched the cake fly upside down across the floor.! I cried. When I was thirty something, I watched my mom and her husband drop my turkey on the floor! Bless their hearts, they were just cleaning up after thanksgiving dinner! They were upset, I was laughing.
My Food For ThoughtHaving problems with cakes? Use parchment. Spray the layer pan with a spray oil. Line your pan with parchment and spray again. Now flour the pan and tap out the excess. I never have a problem with loose crumbs when I frost cakes baked on parchment. Use cake flour such a soft as silk. Regular flour doesn't give you a delicate crumb like cake flour always will.
