I am a farm raised girl, trying to raise my children with the same work ethic and responsbilities that I was raised with. My family comes first, no matter what. Both my husband and I are diabetics, him being a type 2 and me being a type 1, I enjoy finding ways to feed my family with nutritious meals and treats. My son has a severe allergic reaction to any nut products, so I have taken upon myself to make candy bars and treats for my boy to enjoy at parties and holidays so that he won't feel left out. I thank the Lord for cereals and seeds! I am your tempermental, stubborn, irish red head, with deep morals, principals and values that I highly guard.
My Greatest Cooking Triumph
Finally able to master chicken fried steak in the cast iron pan without burning it, or having it under cooked.
My Biggest Kitchen Disaster
One year we had our Thanksgiving a couple of days late due to work schedules. So every year we deep fry a turkey or two. I picked up two turkeys prior, and I was thawing them in water in the five gallon buckets in our tub overnight. My hubby was getting the turkey cooker set up, while I was getting the birds ready for their baptism. I opened the first bird, and a horrible stench came from the wrapper! I pulled the bird out and half of the bird was GREEN! I opened the other one and that too had a horrible odor, but this time I saw green where I opened it. Two brand new birds were rubbish! I frantically ran and got my husband, and we quickly ran to town to see what they had in the grocery store. We took the birds with us and the receipt to the store, and the manager said that they would help us and to go and find something to be suitable for our crowd. All that we could find was a prime rib roast and a shank ham. We grabbed both, and the butcher removed the bones for us so that we could fry them since we had the oil already. The butcher gave us the time frames that he suggested we cook these in our cooker. It was the first time that we ever had deep fried prime rib and ham, but it was delicious and cut like butter. It was a disaster, but it had a really nice ending.

Enjoy the temptations of indulgences, but keep it in small portions!
