I am a native New Mexican with a great love of Mexican foods and southwest cooking. My background is multi-cultural, so I have a love of foods from all over the globe as well. There are few things that I'm not willing to try at least once. I admit it. I have an obsession for camp oven cooking! Food just tastes better cooked in a good cast iron dutch oven over a handful of coals! Ask me about cast iron, and I'm liable to talk your ear off! In the past year, I have also come to have a great appreciation for the wide variety of great dishes that can be made in a pressure cooker. I only ever used one to make beans, so it's come as a pleasant surprise and a great culinary adventure to learn how to use one for more than just that.
Every successful meal, even your easiest recipe, is a triumph! Every time my partner pats his belly and compliments a meal, I feel like a winner!
Before I learned how to properly use a pressure cooker, I once thought I could rapidly depressurize mine by pressing slightly on the overpressure plug. I didn't press it "slightly," though. I managed to completely dislodge the plug and redecorated my kitchen in brown splotches as pinto beans exploded out of the little hole and went EVERYWHERE! Do you have any idea how hard it is to clean beans out of a textured ceiling?!? LOL!
