Wow, I had no idea I had lost my profile!!! I was fortunate enough to be able to have my Username changed but when you do.....everything starts over, how long you were an FE, when you joined the Forum...all of it. And...evidently your profile. I am not very good at writing about myself. It’s why, although I had plenty of talent as a soprano, I was much better as a librarian. Being a librarian is helping people, feeling needed and most times seeing a pleasant outcome. As much as I loved my music, the same cannot be said of that career. People tend to be very unkind about music. Just take a peek on YouTube some time and see the comments people have made. Also music people don’t fit too many places. We are odd. I don’t mean it unkind, we just are. I guess loving to cook goes right along with all of this...it's creative, it can be risky and there can be no question it is helping people, feeling needed and most times seeing a pleasant outcome. Most times.
My Greatest Cooking Triumph
My answer to this was very different when I first became a Field Editor. But now, we have some health issues in our family and I cook even more from scratch than I ever did...pretty well everything. I have to keep my DH at less than1200mg of sodium a day. And I do! That is my greatest cooking triumph now. I know more about every nutrition label than I ever thought I wanted to. I live with searching the Internet for low sodium information. I do it every day and I vary our meals and our diet. I plan every week on not just what to cook, but what to make that is different, how I can adapt it, how it will look inviting and how I can make it taste good too. Sort of like I always did because I love to cook...just a little harder and a little more time-consuming now.
My Biggest Kitchen Disaster
I have been pretty lucky in my cooking even though I experiment but I have burnt a pot or two that I finally had to pitch and there can be no question I was embarrassed when I served shrimp and pasta and found I had forgotten to take the shells off of the shrimp. Worst part is I knew I had to do it and forgot it. Would have been better if I could claim being naive!
My Food For Thought
I bore people to death with this I know but...we never eat as healthy unless we plan ahead and cook ahead. Even when my cooking was not as difficult and we both worked this was true. It is too easy to pick up something quick and fairly unhealthy not just because of having to go to the trouble of getting something made but also because cooking and planning is HARD and it takes brainpower. Lots of it and forever.

Cooking, music, reading, nutrition. Reading other people's wonderful ideas and either using them or adapting them to my own needs.
