I am a Stay-At-Home Mother of two. I am also a free-lance journalist/artist/photographer. I love to cook and I enjoy creating art in colored pencil, pastel and mixed media. I love to photograph my family as well as the Nebraska Sandhills and other beautiful areas I see. I try my best to stay fit and I eat healthy, work out with weights whenever possible, walk when I can and geocache with my kids (many caches require a hike to locate them).
I have had recipes printed in a number of cooking magazines including Bon Appetit, Taste of Home, Country Woman and Reminisce. My family and I have been featured in the Living Well section of Taste of Home Heatlhy Cooking and several of my recipes were printed there. I have also been a contest finalist on Epicurious.com.
As a young child, my mother gave us each the opportunity to "plan" a menu, purchase the ingredients and cook the meal. She bit her tongue and let us learn from our mistakes. My first "menu" consisted of jello, chicken mousse and chocolate mousse. Needless to say, the meal was a bit "soft" and lacked any texture. The chicken mousse was AWFUL! We ended up going out for pizza after my father asked me if I would be too offended. Who was he kidding! I was HUNGRY and I wasn't eating what I had cooked!
Plan your meals to put a rainbow of color on your plate and they will be a feast for your eyes as well as nurtritious and tasty for your insides.
